I did make the chopped cheese sandwich, I used 97% fat free ground turkey, it came out all right but it was way too dry.

2 tablespoons olive oil
1 pound ground beef (75/25)
1 onion (peeled, small dice, divided)
1 cup dill pickle chips (roughly chopped, divided)
1 cup pickled jalapenos (roughly chopped, divided)
8 slices American cheese
1/4 cup yellow mustard
4 Kaiser rolls (warmed)
Kosher salt and freshly ground black pepper (to taste)

Directions

Preheat a griddle over medium-high heat and grease with olive oil. In a large bowl, add ground beef and season well with salt and pepper to taste. Mix thoroughly until combined. Divide meat into 4 equal parts and form into thin patties. Add the onions in an even layer to the griddle and cook stirring occasionally, until softened, about 1-2 minutes. Place the formed patties on to the griddle and cook for 2 minutes. Flip, and use two large spatulas to chop the onions into each patty. Chop desired amount of pickles and pickled jalapenos into the patties and top each with 1-2 slices of cheese. Cover the patties with a large metal bowl and cook until cheese has melted, about 1 minute more. Remove mixture to a warm kaiser roll spread with mustard, and serve!

The cheese melts down in the cracks and holds it together and the crispy edges of the burger plus the usual toppings are mixed throughout it. If you can eat buns this would be really good on the buns.

As some of you probably know, I don't like cheeseburgers unless they have bacon on them. Bacon makes everything better. I don't want things like mayo, ketchup, raw onions, mushrooms, etc on burgers. Just mustard, pickle, and lettuce usually. I use the lettuce as a wrap but it's kind of hard to do with this if you don't eat buns. I was watching the Chew one day and the theme was about things the co-hosts had tried and fallen in love with when they moved to New York City. I'm not much of a city person but I would imagine that NYC has some amazing food. When it was Carla Hall's turn she introduced a recipe served in bodegas (small grocery stores) called Chopped Cheese which is famous in the Bronx and Harlem. Carla spent a lot of time getting the recipe to mimic the one she liked. There was one of these burgers sitting in the back when Carla was testing this recipe and apparently Michael Symon saw it, tasted it, and ended up eating the entire burger. He loved it so I was intrigued. I had some ground beef I needed to use and tried this recipe and my hubby and I both loved it too. Michael Symon said it was like a Sloppy Joe without the tomato sauce. I like it better than Sloppy Joes.


Chopped Cheese Sandwich by Carla Hall
