We're all scratch cookers here, but I knew we'd be busy with yard work today, so when I saw a package of pre-made falafel that you bake in the oven I had to give it a go. (I had a lovely conversation with the kid in the produce department about good and healthy food! emoticon )
Any road, bought the falafel and will make some pita bread and have that for dinner tonight!

I did up some chicken breasts in the instant pot for lunches next week, and then thought, eh, why not try the rice cooking feature? So I did! Cooked the rice in the chicken drippings. YUM!

So, i think I've told you before that once a month at my team meeting at work I make food for the entire staff of the library where I work. Any road, yesterday I served two overnight dishes and they were smash hits! One was a Blueberry French Toast Casserole (which we all know is really just Bread Pudding we're allowed to eat for breakfast!) and the other was a Green Chile Casserole.

I made both of them Thursday night, put them in the fridge, carried them into work the next morning to bake, and most of it was gone in less than two hours! emoticon

the Chile casserole I served with salsa & sour cream & guacamole. It would have been good for dinner, too emoticon

I love doing this because then I can make amazing stuff but don't have to worry about leftovers!

Leftover chicken breast, gravy, mashed potatoes, peas.
I didn't have any of my cranberry sauce left, so I put strawberries, rhubarb and a little brown sugar in a pan and simmered away. When the rhubarb was done I added fresh blueberries and turned off the heat. Oh my! A lovely summer 'sauce'

Had to go to my mom's house this morning to make sure there was no storm damage, so cheated a bit on my Sunday brunch : Bagels & pastry from Panera Bread. I'll chop up some strawberries, canteloupe and watermelon to go with it. Orange juice and more coffee emoticon

Oooh, that zucchini sounds amazing! I had some broth in the freezer so I heated that & added some light coconut milk and some star anise and ginger, and brought that to a boil. I sliced a cooked chicken breast fairly thin and put it in a bowl and poured the coconut broth over it.

HB eggs! Now that's interesting.
Tried something new tonight. Had not had steak for many, many months so bought some when shopping today. While grilling it I sliced zucchini lengthwise, dipped it in olive oil, garlic powder, black pepper and Italian seasoning and grilled it. Was very good and will do again.

Looked online at Kohls for Instant Pot and am thinking about it. Afraid I would use it more as I do my crockpot. I'm retired and don't have to rush to cook a meal and I love using oven so I can cook 4 or 5 things at same time.
I have a rice cooker and do like it.
I can see the advantages for the working woman and the reviews were really good.

I made the jeweled rice! Yummy! Brown basmati cooked in coconut milk & water; I stirred in the tropical dried fruit I had at the end and let it soften.
Sautéed onions, garlic and ginger then added more coconut milk. when it came to a simmer I added the left over grilled chicken thighs and let them warm through. Served with quick pickled cucumbers, radish slices, cilantro and scallions.
Really tasty!

Today I just threw some cooked chicken on warmed tortillas. Late night and too late to make what i Had planned. Tomorrow I'm going to do dried fruit and coconut in rice with chicken.

My Start Page had 20 recipes to make in Instant Pot. Some sounded very good! Funny I didn't know of them until you mentioned them the other day. I must ask my son if that is what he bought last winter when he said he got a pressure cooker.

I will try the kasha. I'm not a big fan of quinoa or couscous and I do have to watch the carbs. Looks like it has a lot of nutritional value, but no potassium which I have a hard time getting enough of these days.

Yes, Kasha is buckwheat groats. The nutrition profile is amazing. Everyone promotes Quinoa but I think Kasha has more flavor and a chewier consistency. We dry cook it with an egg and then add broth and butter (or olive oil) and just love it. You can usually find it in the Kosher Foods section of the grocery.

One Cup Kasha has :
155 calories
6 grams of protein
1 gram of fat
33 grams of carbohydrates
5 grams fiber
Only 1.5 grams of sugar
86 milligrams manganese (34%)
86 milligrams magnesium (21%)
118 milligrams phosphorus (12%)
6 milligrams niacin (8%)

The strawberry sauce I poured across the veggie burger and kind of swirled it into everything as I ate. I think it would be better on chicken to tell you the truth, but I knew it needed something and didn't want to go the gravy route!

Your fruit salad sounds fabulous!

We ate leftovers for several days along with freshly made green salad.
Today I made fresh fruit salads using pineapple, strawberries, kiwi, and blueberries. Sent the big dish next door for grandkids.

It was 'taco Tuesday' but I had just made tacos and we always have tostados; enchiladas seemed too heavy & too much work. I ended up making a Chile Puff with black beans on the side. Served with lettuce, scallions, sour cream & guacamole.
It looks impressive but is really pretty easy, if a little on the cheesy side

Making homemade vegetable broth from all the veggie scraps I save and freeze and also good way to clean fridge. I will get a couple quarts from it and then put in the freezer. So good and healthy for you.

I cooked a 6 qt. pan full of potatoes, lots of cabbage, carrots and a little onion. Put kielbasa on top for flavor. When kids got home about 5, they were glad to have the drumsticks I had cooked along with the vegetable mix. All cooked with no salt. (I can't eat kielbasa because of the sodium. That's why I cooked drumsticks in the oven.)
I ate the cabbage and carrots for both lunch and dinner and will have them again tomorrow. I got my veggies!

Sounds good! Tonight we had brown rice, black beans, salsa and chicken, all leftovers from last night's dinner - except the salsa. DH got cheese melted on his and loved it. I had cheese earlier in day. Added vegetables and fresh spinach with little dressing. (He had ice cream and I had strawberries with Greek Yogurt. for dessert.)

So last weekend Al smoked some chicken thighs and we had some left over. I thought about making a BBQ sauce for them, but that sounded boring...So I gave it a twist and made an Asian inspired sauce and tossed in the thighs. Then I made a quick Asian style slaw with carrots, radishes, and cucumbers. Pretty dang tasty!

I use to hear from Teacher's at school when my kids were small that they pick my kids to be in their class because they knew they would have their Christmas baking done. I use to bake and sell Christmas cookies and would always send teachers a huge box of cookies for the break room and each teacher that taught my kids would get a big box of cookies as a Christmas gift. I get the post about bringing the food triggered a good, funny memory for me.

Had to chuckle when you said you were invited because they knew you would bring food! I know nothing about Harry Potter so I would be no help.
Didn't make oatmeal this morning as son and his two sons were very busy getting ready to take family on vacation for this next week and I volunteered to fix them breakfast sandwiches they could eat while washing and waxing the boat they were taking along.
Each sandwich was different, yet similar. Two had gluten free bread, one very lightly toasted and son's was on English Muffin. Cooked eggs with yolk broken, heated pre-cooked bacon for all three. Only one could have cheese but all three got mustard. They really appreciated them on paper plate with cubed cantaloupe. Then made one for DH.
When I cracked one egg it went down in burner, on floor and little rug.. Needless to say I had an extra job of cleaning up the mess. We'll miss them this week but we will animal-sit.

Oooh, SparkingGrammy, that does sound good!

Today I'm making a LOT of pumpkin pasties. I'll be freezing them, then next week they go with me to work for our Harry Potter Birthday Party! I've also make pumpkin scones, Coconut Ice and next Saturday I am hoping to make some Hufflepuff Butterbeer pots. We'll see how much I can get done!

For breakfast I had baked oatmeal with peaches, blueberries and almonds.
Lunch was a bowl of homemade beef barley soup I had in the freezer.

Yes, cars really are expensive and the cost of repairs is unbelievable! One can drive a car for many miles these days and just hope you don't need those costly repairs. As you say, many decisions to make.
I didn't cook today. Ate the foods I prepared yesterday.
OOPS! I cooked a breakfast of Maple Link Sausages, poached eggs, toast for DH, and had cantaloupe I cut several days ago.

Costs continue to rise and wages have been stagnant for a long, long time. My husband is looking to retire in the next few years and it would be nice to get a new car now, but the PRICE of a new car!!! We can't dither long, however, because he's nearly 66 and a heavy equipment mechanic with 2 false hips and a wonky colon and a five year contract on a car is pretty terrifying!

I also think people are now more likely to admit they are in need. We had some very tough years when the kids were growing up, and we fed them first and bills second and there were more than a few times a little bit extra food would have been welcome.

I am probably going to take the breading off the chicken tenders we got from Lee's last night and use them in a salad. Either taco or Vietnamese. Decisions, decisions!

Made Belgium Salad this evening as I hadn't made any for us this season and I like it in fridge for vegetables. It is made of canned beans, peas, shoepeg corn, celery, onions, peppers, and a vinegar dressing that is brought to a boil. You may know it by a different name.
Then made up toss salad so it is ready for the next few days. I am determined to get this re-gained weight off even if I can't do a lot of exercise.
Yesterday a TV channel had a drive for food to supply those backpacks and I haven't heard results yet. Just hope the kids who really need the food get it. There is a good program here to supply food for the needy and with all the churches do, I don't understand why kids go hungry. I taught elementary school for 30 years and never had students who were hungry.

I agree, Carol! We are so fortunate and it's heart breaking that others are going without. We have a very good food bank in our area, plus a regional one. A few of the churches collect for their congregations and volunteers collect for the backpack program giving kids snacks and lunches for the weekend.
We are a very rural area, with the Department of the Army as the main employer, yet people here still need all this help emoticon

I have been so hungry for a baked potato that tonight I put one in the potato bag and nuked it. Then I topped it with cottage cheese, so will see the reaction tomorrow.
We're getting wonderful cantaloupes now. Aren't we fortunate to get such marvelous red raspberries, strawberries, and other fruits this time of year?
It makes me sick to hear of children going hungry right here in our area as well as around the world.

But then a dish of cottage cheese when I got home - with Mandarin oranges and wheat germ.
For dinner a Chinese Sesame Salad with grilled chicken breast. I even grilled the breasts myself!
Outside on the Weber grill! :)

I love cottage cheese, but being lactose intolerant, it causes me trouble. Plus it is quite high in sodium which I must watch.
This morning we had 45 calorie bread (2 slices) with mayo, bacon and sliced tomatoes. And of course my hot tea with creamer.
Not much lunch - just 1/2 medium banana.
Dinner: big toss salad with blue cheese dressing (homemade), 1/2 stuffed pepper (leftover) and less than 1/2 C. mashed potatoes. Oh, shredded cheese on top of stuffed pepper.
Dessert was 100 cal. Fudgesicle.

For breakfast I had Raising Bran Crunch with 1/2 sliced banana and 1/2 C. Vanilla Soy Milk.
Mid-morning snack was cantaloupe.
