December - I have not been very accountable here this month
emoticon Home décor, clean, music daily, available for visitors - write cards and notes and organize address files .... accomplished the décor and clean and was ready for visit of daughter with her young man!! YEAH I did not do cards, but am OK with that - might work on it some this week but may not...
emoticon JOY - I commit to sharing faith, joy and traditions in a four-picture set on face-book daily through the Christmas season - this takes time and thought but is important to me spiritually and emotionally....ACCOMPLISHED not every day but did well and felt I was encouraging others and meant a lot to me.
emoticon Food goals of Gluten free, Anti-inflammatory, Low Carb-Moderate Protein-High good fats way of eating with continued Intermittent Fasting=14-10 fasting/eating windows and M-W-F fast down to 500cal. Accountable for weight and calories .....Accomplished!! not much wt loss but healthy lifestyle getting engrained into my life and thinking.
emoticon those are walking sticks - not ski poles!!! Goal 5000 steps daily and work up to 6000 if knee will tolerate it... increase time on treadmill M-W-F - Neuropathy seems to be progressing [getting worse] but I must keep walking with assists.... Not doing # of steps of goal but am being consistent with near 4000 per day --- slow increase of treadmill minutes and no pain there....Stairs becoming very hard but determined and getting in a couple flights of thirteen most days - thankful for that training as had to do two flights daily in Daughters house over the holidays.

Linda - I love your accountability list - not only do you have food goals but emotional goals as well that cold affect your eating. Please check in to let us know how you're doing with it.

I have several Christmas parties this next week! So I need a plan too.
Lower carb, low fat (for the GERD), track calores.

1.Use the plate method to gage portion sizes - half the plate for fruits and veggies, 1/4 for meats /proteins and 1/4 for carbs.

2. Even if I choose several carbs, only take a spoon of each - try not to let the total amount be over 1/2 cup (palm size portion.) No bread or rolls!

3. limit cooked veggies to 1/2 cup and try to choose the dark greens when possible. Eat more raw veggies/salads when available, but go easy on the fatty dressings..

3. no gravy on the meats

4. Desserts are hard to resisit - so allow only one choice and only a very small portion.

5 Eat lighter for other meals on the days of the parties.

I will let you know how I do with this - Sunday evening, church holiday dinner. Monday night, minister's Christmas party, Thursday ladies prayer group pot luck Christmas party.

Great tips Linda for the bean salad - I would never have thought to use the green bean liquid! You're right - it does take longer to write it out than to make it. LOL!

I also love that you write out the ingredients on a card next to the bowl - what a neat idea and a good one too because so many people are on diets these days.

Sorry I didn't answer this sooner -
the 5 bean salad is so simple ---1 can each of green beans, wax beans, dark red kidney beans, garbonzo beans [also called chickpeas] and black beans. I reserve the juice from the green beans and use in the dressing. I rinse each of the types of beans in a cullander and into a bowl [I like a tuper-ware bowl that has a good lid to tip it all back and forth]
So all the beans are in the bowl - you can add chopped onioin or sweet pepper if desired, I don't for public sharing but put them in if eating it at home.
Dressing : 1/2 to 2/3 cup each of green bean juice, cider vinegar, brown sugar or substitute and a sprinkle of DASH seasoning and 2-3 Tabkespoons oil of choice. Combine and bring to boil, pour over the beans and mix. If Tupperware, I just turn it upside down everytime I open the fridge ---if taking to public sharing I place it in pretty bowl when I get there. It is harder to write it out than to make it!!!

The pineapple/tangerine salad is just that!!! can of pineapple tidbits in juice and two cans of tangerines/mandarine oranges drained and gently mixed in pretty bowl. You can dress this up with yogurt and marshmallows if desired but I just go plain for the dieters and people with food sensitivities. I make little signs with ingredients also to set beside the dishes for same reason.

Great job Linda - I also like to take foods that I can eat to the pot luck dinners. It's a great strategy to help us stay on track - and to avoid those tempting dessert tables.

What beans do you put in your 5 bean salad? and what is in the tangerine pineapple salad? They sound interesting and I love trying new things. I make a 3 bean salad and add peppers and onions. One of these days I will try adding carrots too.

Daughter processed a lot of sweet peppers and tomatoes into the freezer for winter soups. I cut the next to the last cucumber from the garden for lunch - there may be a few stragglers in the green house when we return. Plums are supposed to be low glycemic so have a few more of them on the counter to finish up this weekend.

Tomorrow is church potluck day so will fix a pineapple/tangerine salad and 5bean salad to take - I like to do simple foods and obvious gluten free dishes for these occasions for my own comfort and encouragement for others - then stay completely away from the dessert tables.

I've been working more veggies into my life - today I went to the farmers market and got two beautiful tomatoes, some corn, some watermelon and some cider. Still using veggies from last week - have a cauliflower and a butternut squash left and some zucchini in the fridge. I may go back on Saturday to pick up some more/ Summer is winding down and I really want to get as many in as I can while they are fresh and the good weather holds.

Gearing up, practicing and refining my October challenge :
Will try to check in daily: No candy [Vit C cough drops don't count HaHa]; Oz. of water; Number of steps; and calories and grams carbs along with carb/protein/fat %s. Also beginning and ending wt. on the scales at home.
Yesterday I got the Vit C cough drops - had peppermints in the cart and put them back!!!
Water intake will be distilled water on the trip - I buy gallon jugs and use it so not travel diareah and so I have it for my breathing machine at night - lot cheaper and more reliable than bottled waters and I drink from glass containers and can make my own ice too if at refrigerators.
Pedometer goes on first thing in the morning - wear it on my sock as waist band does not capture and fit bits don't work if you use walker or pushing carts etc so just rely on my cheap regular pedometer $5.95 at Walmart. Yesterday was new high for non race day 8125steps.
Yesterday 1067cal 46carb 17-32-51% Carb-Protein-Fats percents
Wt at home 205.0#

Linda, so proud of you to have a plan in place for your vacation! It looks daunting, but you have what it takes to do this!!!! Praying for you!

If you can track your foods on vacation, I will work at tracking all my foods too. I will be here at home, but have been lax about tracking. And that's the only way I can really lose weight.

One of my other teams is doing an October challenge for month of October and I am going to be working on these goals and be accountable for them ---anyone else want to join a similar challenge or make up one that fits your life needs? I really respond well to accountability and thought it would be good to let you know what I am thinking.
OCTOBER Goals are solidifying to
#1 - DO NOT BUY any candy this month ... any eaten will be one piece SLOWLY SAVORED.
#2 - carefully track ALL FOODS EVEN ON VACATION! Goal of tracking is to be mindful and maintain or loose weight this trip!!!
#3 - keep goal of at least 60oz PLAIN water in each day in addition to herb tea to equal 120oz per day. Coffee/mochas will be counted with food.
Since I will be away from home 21 days that month plus social Sundays the 1st and 29th...those are huge goals and I will meet them in order to NOT GAIN any wt. in fact hoping to lose four more between now and Dr appointment on Oct. 23rd.
Will try to check in daily: No candy; water oz; and calories with carb/protein/fat %s. Also beginning and ending wt. on the scales at home.

July 1 Did not track specifics - just was very careful at the social meals to only do protein and fruit and soft veggies - with no teeth on top , I cannot do raw crunchy veggies [at home I chop them fine and saute to manageable softness]
July 2: zucchini, summer squash, green pepper, tomato, cucumber, raspberry
1365cal 34carb-15fiber=19 net-carbs
July 3:squash, tomato, chives, lettuce, olive, cucumber, avocado, tomato
1153cal 24carb-9fiber=15net-carbs

This accountability is just not working out ---will put efforts into daily tracking but not in reporting here...

Starting in July I want to be accountable for veggies, low carb fruits and calories and net carbs [total carbs minus fiber for the day and goal is under 30 the first week]
6/30 butterhead lettuce x2, olives, tomato, bok Choy, raspberries, .....finish tonight


EDIT on 07/12/17 Ooooops - just not keeping up this effort - spending time studying and then Dr says no to KETO Diet until I get heart re-eval... so just going to keep carb count low return to Anti-Inflammatory foods - accounting will be under Shining like a star.
