EASY HALLOWEEN JALEPENO MUMMIES
Easy Halloween Jalapeño Mummies are a slightly creepy, fun and healthy food treat.
Prep Time10 minutes
Cook Time15 minutes
Total Time 25 minutes
Servings: 10 Jalapeño Mummies
Calories 147kcal

INGREDIENTS
5 jalapeno peppers
4 oz cream cheese softened
4 oz pepper jack cheese grated
1/4 tsp garlic powder
1/4 tsp onion powder
Pinch Kosher salt and pepper
20 candy googly eyes
1 can refrigerated crescent roll dough
1 egg

INSTRUCTIONS
1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
2. Slice the jalapeño peppers in half lengthwise and scoop out the seeds and ribs.
3. In a small bowl mix the cream cheese, pepper jack cheese, garlic powder, onion powder, and salt and pepper. You can also use a food processor to mix everything.
4. Fill the jalapeño pepper halves with the cheese mixture. Don't overfill or the cheese will ooze out while baking.
5. Unroll the crescent roll dough leaving the triangles together and pinching the perforations together. Cut thin strips (about 1/2 inch wide) of dough and wrap one or two pieces around each pepper half. Leave a space at the top open to insert the googly eyes when they are done.
6. Make an egg wash by combining the egg and about one tablespoon of water. Mix well. Place the mummies on your baking sheet, and brush a thin layer of egg wash on each one.
7. Bake for about 15 minutes or until the mummies are golden brown. Remove from the oven and place the candy googly eyes in the melted cheese.
8. Serve immediately and enjoy!


NOTES
SHARON'S EXPERT TIPS:
If you are making Easy Halloween Jalapeño Mummies for young children, you might want to substitute Monterrey Jack cheese for the pepper jack cheese to tone down the kick a bit.
You can find the candy googly eyes in the baking ingredient section of most grocery stores; they are also available at Michael's and other hobby stores that carry baking and candy making supplies.
I use a serrated grapefruit spoon to scoop out the seeds and ribs from the jalapeños. Be sure to wash your hands thoroughly after handling the peppers and avoid touching your eyes or wear gloves.
To make the Jalapeño Mummies ahead, I have found it works best to make and stuff the peppers up to 24 hours ahead of time, then cover and store them in the refrigerator. Before your party wrap them with dough and bake them.
Be sure to add the googly eyes right with the mummies come out of the oven while the cheese is still melted so they will stick.

CREEPY HALLOWEEN FINGER COOKIES
Minutes to Prepare: 10Minutes to Cook: 10
Number of Servings: 1

INGREDIENTS
1 cup heart-healthy margarine
1-1/2 cups white sugar (or sugar substitute)
1/2 cup egg beaters
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
48 almonds

DIRECTIONS
1. In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time, then stir in the vanilla and lemon extracts. Combine the flour, baking powder, and salt; gradually blend into the creamed mixture to form a soft dough. Cover or wrap dough, and refrigerate overnight.

2. Preheat the oven to 400 degrees F (200 degrees C). On a floured surface, roll the dough out 1/4 inch thick. Slice into strips and roll between your hands to form finger shapes. Press an almond into the end of each cookie. Place cookies 2 inches apart on ungreased cookie sheets.

3. Bake for 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks.

Makes 48 servings (1 serving = 1 cookie).

Speaking of pumpkin pie - I read somewhere that Libby's was changing up the recipe for their pumpkin pie on their labels trading the sugar for sweetened condensed milk.

This French toast is perfect for a crowd--no more standing over a hot stove while one person at a time eats breakfast.

INGREDIENTS
4 ounces day-old French or Italian bread, cut into 3/4-inch cubes (about 4 cups)
1/3 cup golden raisins
1 (3-ounce) package cream cheese (low or no fat) cut into 1/4-inch cubes
3 large eggs
1 1/2 cups 1% milk
1/2 cup maple syrup
1 tsp vanilla extract
2 Tblsp granulated sugar
1 tsp cinnamon
Additional maple syrup, optional

DIRECTIONS
Spray 11 x 7 inch baking dish with nonstick cooking spray.

Place bread cubes in single layer in prepared baking dish. Sprinkle golden raisins and the cream cheese cubes evenly over the bread cubes.

Beat eggs in medium bowl with electric mixer set at medium speed until well blended. Add milk, maple syrup and vanilla extract; beat until well blended.

Pour egg mixture evenly over bread mixture. Cover; refrigerate at least 4 hours or overnight.

Preheat oven to 350 degrees F. Combine sugar and cinnamon in smnall bowl; sprinkle evenly over casserole.

Bake, uncovered, until puffed, golden brown and knife inserted in center comes out clean, about 40 to 45 minutes. Cut into squares and serve with additional maple syrup, if desired.

Sweet Cranberry Sage Turkey Quesadilla

Ingredients
1 lb. cranberry sage Turkey Breast, sliced thin (or just regular turkey)
½ lb. Sharp Cheddar
¼ cup Cranberry sauce
8 Flour tortillas (10 inch)

Directions

Spread 1 tbsp. of cranberry sauce over one tortilla and add 4 slices of Cranberry Sage Turkey Breast. Stack 2 slices of Sharp Cheddar on top of the turkey and place the second tortilla on top.

Place the quesadilla in an oiled nonstick pan on medium heat until golden brown.
Flip to brown the other side. Cut into quarters and enjoy!

Love no peek chicken!

I did this last night

4 pork chops
1 can cream of mushroom soup
1/2 cup sour cream
1/4 cup water
1 pkg stove top stuffing mix

Put in pork chops. Mix soup, sour cream and water together and pour over top. Add dry stuffing mix on top. Cook on low in crock pot for 6 hours.

It called for the stuffing after the pork chops and then the soup mixture to be poured over all of that. I thought the stuffing would be a bit mushy so I just took out the pork chops after it was done and mixed the stuffing with the soup mixture and that turned out good. My pork chops were a little dry but they were very thin. I've also read where someone put a couple pats of butter on the top of the stuffing.

Tried and it was easy and tasty.

No Peek Chicken



Ingredients

Cooking spray

2c. long grain rice

1 (10.5-oz.) can cream of chicken soup

1 (10.5-oz.) can cream of mushroom soup

1c. water

1tsp. dried oregano

4 boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

1 (1-oz.) package onion soup mix

Freshly chopped parsley, for garnish

Directions

Preheat oven to 350° and grease a 9”-x-13” baking pan with cooking spray. In a large bowl mix together rice, soups, water, and oregano then pour into baking dish.

Season chicken with salt and pepper then place on top of rice mixture. Sprinkle onion soup mix over chicken then cover with aluminum foil and bake 1 hour and 15minutes, or until chicken is cooked through and rice is tender.

Garnish with parsley before serving.

CHEESY GARLIC CAULIFLOWER BREADSTICKS
A delicious cauliflower breadstick recipe that is a low-calorie option to real bread.

INGREDIENTS
1 cup cooked, riced cauliflower
1/2 cup shredded reduced fat mozzarella cheese
1/2 cup Parmesan cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt

FOR TOPPING:
2 tablespoons softened light butter
2 cloves garlic, finely minced
1/4 cup grated parmesan cheese
1/4 cup grated reduced fat mozzarella cheese
*Optional Marinara sauce for dipping

DIRECTIONS
Preheat oven to 450 degrees.

Chop the cauliflower florets into chunks and steam them in a steamer or on the stove until slightly soft for 15 minutes. Place in a ricer or grate.

One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

TO MAKE THE BREAD:
Spray your baking stone or sheet with PAM and top with parchment paper.

In a medium bowl, stir together 1 cup cauliflower, egg, Parmesan and Mozzarella. Add oregano, crushed garlic and garlic salt, stir.

Transfer to the baking stone or sheet, and using your hands, pat out into a large rectangle

Bake at 450 degrees for 15 minutes.

Remove from oven.

Mix 2 TBSP butter and garlic in a small bowl and.spread the butter and garlic mixture over baked cauliflower bread and top with Parmesan and Mozzarella cheeses.

Place back in the 450 degree oven until all cheese is melted.

Slice and Serve!

Warm up some apple cider with a couple of stick of cinnamon and a tablespoon of brown sugar (or use brown sugar substitute) Enjoy!

Another trick is to add in some SF caramel syrup. Smuckers has the best.

Fall Turkey Sandwich

This is a recipe that can be made to fit your personal preferences but the basics are the same:


Turkey (pick your favorite - honey roasted, peppered, smoked, etc)

Cheese - Havarti, provolone, swiss

Thin slices of apple. Best is granny smith for its tartness, but can sub your favorite apple variety.

lettuce, onion, peppers, alfalfa sprouts - again - your preference.

Your bread choice

apple butter - don't need a lot, just enough for flavor.

If you like club sandwiches, even a slice or two of bacon goes well.

You can also eat plain, grilled or panini style.

Enjoy!

Busy Day Soup

An easy soup recipe your family will love! It's quick to make and takes little effort. Perfect for those busy weeknights.

Ingredients
1 lb ground beef
1 package onion soup mix
1 3/4 cup mixed frozen vegetables
5 cups water
1 28oz can diced tomatoes
1 cup macaroni, uncooked

Instructions
In a large soup pot, brown ground beef. Drain fat.
Pour in water, onion soup mix and tomatoes with juice. Simmer for 1 hour on medium low.
Add macaroni and frozen vegetables. Cook 15 minutes longer on medium heat. Serve hot.


Notes
If soup is too thick, add more water to thin out.

TUSCAN CHICKEN MILANO

Minutes to Prepare: 5
Minutes to Cook: 20
Creamy and delicious, this restaurant makeover is easier on the waistline.

INGREDIENTS
3 cups whole grain pasta
2 tbsp olive oil
1 1/4 pound chicken breasts, cut into bite-size pieces
10 garlic cloves, chopped
2 tbsp all purpose flour
1/2 cup chicken broth
1/2 cup sun dried tomatoes
1 can evaporated milk
2 tbsp grated cheese

DIRECTIONS
Prepare the pasta according to package directions, omitting salt and oil.

Heat the olive oil in a large, deep saute pan. Add the chicken and cook over medium heat until no longer pink.

Transfer to a plate, and add the garlic.

Cook for one minute, until the garlic is fragrant and starts to soften.

Add the flour and stir well to combine.
Cook for two minutes, stirring constantly, until the flour is light brown.

Carefully pour in the chicken broth, using the back of a wooden spoon to scrape the bottom of the pan and release any cooked-on bits. Add the cooked chicken, sun-dried tomatoes and milk, and cook for two minutes, until the mixture simmers.

Drain the pasta, reserving two tablespoons of the cooking liquid.

Remove from heat and add the cooking liquid and the pasta. Toss to evenly coat the pasta, then add the cheese and toss again.

Serve immediately.

SERVING SIZE:�makes 6 servings (1 cup cooked pasta and 3 ounces cooked chicken)

Roasted Brussels Sprouts with Warm Honey Glaze

Ingredients

1½ lb. brussels sprouts, trimmed, halved

¼ cup extra-virgin olive oil

½ tsp. kosher salt, plus more

Freshly ground black pepper

¼ cup honey

⅓ cup sherry vinegar or red wine vinegar

¾ tsp. crushed red pepper flakes (optional)

3 Tbsp. unsalted butter

3 scallions, thinly sliced on a diagonal

1 tsp. finely grated lemon zest

Place a rimmed baking sheet on bottom rack of oven; preheat to 450°. Toss brussels sprouts and oil in a large bowl; season with salt and black pepper.

Carefully remove baking sheet from oven. Using tongs, arrange brussels cut side down on baking sheet. Roast brussels on bottom rack until softened and deeply browned, 20–25 minutes.

Meanwhile, bring honey to a simmer in a small saucepan over medium-high heat. Reduce heat to medium-low and cook, stirring often, until honey is a deep amber color but not burnt (it will be foamy, that’s okay), 3–4 minutes.

Remove from heat and add vinegar and red pepper flakes, if using, and whisk until sauce is smooth (it will bubble up quite aggressively when you add the vinegar before settling). Return saucepan to medium heat, add butter and ½ tsp. salt, and cook, whisking constantly, until glaze is glossy, bubbling, and slightly thickened, 3–4 minutes.

Transfer brussels sprouts to a large bowl. Add glaze and scallions and toss to combine. Transfer to a platter and top with lemon zest.

Here's another recipe that sounds good, but I haven't tried it (yet).

Apple Walnut Oatmeal

1 cup water
1/4 cup apple juice
1 cup diced apple
1/4 cup chopped walnuts
2/3 cup rolled oats
1/2 teaspoon cinnamon

1. Place water, juice and apples in a medium-size pot and bring to a boil.
2. Stir in the oats, walnuts and cinnamon.
3. Reduce heat and simmer 5-10 minutes, depending on the consistency you like.

Makes 2 Servings
Per serving: 244 calories; 8 g protein; 11 g fat; 31 g carb; 6 g fiber; 3 mg sodium

This is one that I haven't tried yet, but it sounds good.

Stovetop Mock Mac and Cheese

Serves 4
Nutrition per serving: Calories 310, Fat 25 g., Carbs 7 g., Fiber 3 g., Protein 14.5 g.

1 head cauliflower
2/3 cup heavy cream
1/4 tsp ground mustard
1/2 tsp salt
1/4 tsp garlic powder
1 1/4 cups sharp cheddar cheese
4 slices deluxe American cheese

1. Chop cauliflower into small pieces, including stem. Discard leaves.
2. Boil or steam, chopped cauliflower for 10 minutes, until very tender. Drain well.
3. Transfer drained cauliflower to a saucepot over medium heat and add heavy cream, mustard, salt, and garlic powder.
4. Stirring frequently, bring the heavy cream in the pot to a simmer. Let simmer 5 minutes.
5. Remove pot from heat and stir in cheddar and American cheeses, blending until well combined. Let stand 1 minute to thicken before serving.

No bake pumpkin cookies

1/2 cup pumpkin purée
•1/2 cup (1 stick) butter
• 1/4 cup smooth peanut butter
•1/4 cup milk
• 1/4 cup brown sugar
• 1/4 cup granulated sugar
• 1 teaspoon vanilla extract
• 4 cups quick oats
• 1 teaspoon pumpkin pie spice
• 1/2 teaspoon ground cinnamon
• Pinch of salt


Instructions
1.Line a cookie sheet with wax or parchment paper and set aside.
2.In a medium saucepan, add the pumpkin purée, butter, peanut butter, milk, and sugars.
3.Bring to a boil under medium heat, stirring occasionally.
4.Reduce heat to low and allow to simmer for 5 minutes.
5.Remove from heat and allow to cool for 5 minutes. Stir in the vanilla extract.
6.Add the quick oats, pumpkin pie spice, cinnamon and salt to a large mixing bowl. Whisk to combine.
7.Pour the pumpkin mixture into the oats and mix well.
8.Shape into 2-inch cookies and place on the lined cookie sheet.
9.Allow to cool completely and ENJOY!!


Notes
Make sure when boiling to not over cook, it will change the flavor.

Love CHILI! My MIL makes this soup every Halloween......

Easy Chicken Tortilla Soup

INGREDIENTS:

1 rotisserie chicken
2 (16-oz) cans refried beans
1 (1-oz) package taco seasoning
2 (14.5-oz) cans petite diced tomatoes and green chiles
1-1/2 cups frozen corn kernels
1 (15-oz) can black beans, drained
4 cups chicken broth

INSTRUCTIONS:

Remove skin from rotisserie chicken and discard. Remove meat from bones. Discard bones and chop chicken.
Combine all ingredients in a large pot or Dutch Oven. Stir well.
Bring to a boil over medium-high heat. Reduce heat and simmer for 15 to 20 minutes, stirring a few times while cooking.

If soup is too thick, add a little water or chicken broth to thin it out.

Add shredded cheese, sour cream and tortilla strips for garnish.

Minutes to Prepare: 15 Minutes

I make this every year for Halloween and throughout the fall. We eat it with corn bread. Tastes great with a little shredded cheese on top. Great for Potlucks!

INGREDIENTS
1 pound extra lean gound beef
1 package taco seasoning
3 cloves garlic
2 tsp ground black pepper
1 tbsp dried parsley
2 tsp hot pepper sauce
2 cans stewed tomatoes
2 cans kidney beans
.25 cup finely chopped carrots
.25 cup finely chopped celery
.5 cup diced green chilis
1 cup pearled barley
water
Serving Size: 1 cup

DIRECTIONS
Brown the ground beef in a stock pot. Drain all fat and rinse with water. Add Taco Seasoning, Garlic, Pepper, Parsley, Hot Sauce, Stewed Tomatoes, and stir. Add 2 cans of Kidney Beans. Fill cans with water and add to pot. Stir occasionally until heated throughout. As this is heating, dice carrots and celery finely. Add to pot once it is simmering with Green Chilis. Add 1 cup uncooked barley and stir. This should simmer for at least 6 hours over medium low heat. Stir occasionally to keep beans from sticking to bottom of the pot. Add water as desired.

Tastes best when made several days in advance. I usually make a double batch to serve to family on Halloween with cornbread muffins. Add a little low fat shredded cheddar if you like. Note this is not included in the calories as is. May substitute ground turkey and add more finely chopped vegetables if desired. May reduce sodium by choosing a low-salt taco seasoning & low salt hot sauce.

Spiced Apple Pancakes


Ingredients

1 1/3c. all-purpose flour

1 1/2tsp. baking powder

1 1/2tsp. cinnamon, divided

1tbsp. granulated sugar

1/2tsp. kosher salt

4tbsp. butter, divided, plus more for cooking

1 large egg, separated

1tsp. pure vanilla extract

1 1/4c. milk

4 large apples, peeled, cored, and finely chopped (about 5 to 6 cups)

1/2c. brown sugar


Directions

1 Mix flour, baking powder, 1 teaspoon cinnamon, sugar, and salt in a medium bowl. Melt 2 tablespoons of the butter. In a large bowl, whisk to combine egg yolk, vanilla, milk, and melted butter. Gently fold dry ingredients into wet ingredients until just combined, then fold in 1½ cups of chopped apple.

2In another medium bowl, using a hand mixer, beat egg white until stiff peaks form. Fold egg white into batter gently with a rubber spatula until just combined.

3Make apple topping: in a small saucepan over medium heat, melt remaining 2 tablespoons butter. Add remaining apples, brown sugar, remaining 1/2 teaspoon cinnamon, and a 1/4 cup water. Cook, stirring occasionally, until apples have softened and mixture is jammy, 10 to 15 minutes.

4In a large frying pan over medium heat, melt 1 tablespoon butter. Pour about 1/4 cup pancake batter into pan. When little bubbles appear, about 1 to 2 minutes, flip and continue cooking until both sides are lightly golden. Repeat with remaining batter, adding more butter to pan as needed. Serve pancakes topped with apple mixture.

I LOVE acorn squash but my family doesn't (I know, what is wrong with them!) but might have to cook some up and freeze in individual servings just for me! YUM! emoticon

I haven't had acorn squash in a very long time. I'm going to add that to my menu plan.

We're having asparagus with dinner tonight. I drizzle it with olive oil and season with garlic and salt. Then roast in the oven.

How to cook Acorn Squash


Ingredients

1 acorn squash, cut in half and seeds removed

2tbsp. butter, softened

1tbsp. packed brown sugar

1/4tsp. cinnamon

Small pinch kosher salt


Directions

1Preheat oven to 400°. Spread butter on inside of each squash half.

2In a small bowl combine brown sugar, cinnamon, and small pinch of salt. Sprinkle over squash.

3Place squash, cut side up, on a large baking sheet and roast until fork tender, 55 to 60 minutes.

Skillet Chicken with Grapes and Caramelized Onions

Ingredients

For the Caramelized Onions
2 tablespoons butter
1 yellow onion, thinly sliced

For the Chicken:
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon thyme
1/4 teaspoon allspice
2 lbs. chicken thighs with skin (4-5)
2 tablespoons oil
3/4 cup dry red wine
1/2 cup chicken broth
2 cups red California grapes
parsley for topping



Instructions
1 To caramelize the onions, heat the butter over medium low heat in a heavy ovenproof skillet. Add the onions cook for 20 minutes or so, stirring occasionally. When the onions are a deep golden color, remove from the pan and set aside.

2 To make the chicken, preheat the oven to 400 degrees. Combine the flour, salt, chili powder, thyme, allspice, and black pepper. Dredge each piece of chicken in the flour mixture, shaking off the excess.

3 In the same pan as the onions, heat the oil over medium high heat. Add each piece of chicken skin-side down and fry for a few minutes until golden brown; flip and cook for a few more minutes. Transfer to a plate (if it’s not fully cooked, that’s okay – it will finish in the oven – the idea here is just getting it browned on the outside).

4 Turn the heat down and let the oil cool off a little bit. Add the wine – this will definitely bubble and sizzle! Add the broth and simmer until the mixture is thickened slightly. Add the onions and chicken to the pan (skin side up) and bake for 20 minutes.

5 Remove from the oven, add the grapes, baste with the sauce, and bake for another 5-10 minutes. Top with parsley and serve with a green salad, bread, quinoa, rice, etc.

Welcome to Dracula’s Diner – the place where Spooks meet Spices. Each week in October, our chilling chefs will fire up the cauldron and carve up some spooktacular recipes for everyone. So check out the diner’s delights if you dare!

(everyone is welcome to post recipes!)


This first one may seem long, but it can be used to inspire you to go above and beyond on your salads:



Pear Salad


Ingredients

Candied Pecans
• 1 large egg white
• 2 teaspoons water
• 1 teaspoon vanilla
• 1 cup white sugar
• 3/4 teaspoon salt
• 1 teaspoon cinnamon
• 4 cups (1 pound) pecan halves

Salad
• 1 bag (6-8 ounces or about 8 cups) fresh spring mix
• 1 cup heaping pomegranate arils
• 3/4 cup dried cranberries
• 1 can (15 ounces) pear halves*
• 4 ounces feta cheese

Dressing
• 3 tablespoons red wine vinegar
• 5 tablespoons white sugar
• 1/2 teaspoon salt
• 1/2 teaspoon dijon mustard do not use regular
• 1/2 cup frozen raspberries completely thawed
• 1/2 cup vegetable oil canola or olive oil will work
• 1 and 1/2 teaspoons poppy seeds


Instructions
For the candied pecans

1.Preheat oven to 250 degrees F and line a baking sheet with parchment paper.

2.In a mixing bowl, whip together the egg white, water, and vanilla until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.

3.Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.

4.Bake for 45 minutes to 1 hour, stirring and tossing every 15 minutes.

For the salad:
1.Thoroughly drain the pear halves and set on a cutting board. Very thinly slice the pears.

2.Toss together the spring mix, pomegranate arils, dried cranberries, pears, and feta cheese.

3.Toss to combine.

For the dressing:
1.Combine all of the ingredients except for the oil and poppyseeds in a blender or food processor. Pulse until the ingredients are well combined. Slowly add in the oil in a steady stream. Blend until emulsified and smooth.

2.Stir in the poppyseeds. This dressing is supposed to be pretty thick -- when you toss it with the salad it does thin out a little with the juices from the salad ingredients.

3.Toss the dressing and candied pecans with the salad. Only dress and add pecans to what you will eat because leftovers don't do so well! You can store the salad, pecans, and dressing separately for delicious leftovers!


Recipe Notes

It can use canned pears because of the texture (soft!) and sweetness to them. Feel free to substitute fresh pears if desired.
The amounts of toppings are general guidelines -- recipe is for a lot of toppings to the amount of lettuce.
