My recipe says 4 grams per 100 are carbs, ... I'm going to look at that again, ... perhaps I discounted fibre, but in any case very low carb, and excellent with cheese on top.

ps on the gravy...i use my recipe most often without the xanthan gum. people fight over it..i havent made regular since my first keto thanksgiving. i made regular and keto..and almost didnt get any of the keto for myself!! i had put it on the table in front of my place..turned and people are grabbing for it. i said HEY!!! thats mine you have your own!! we like this better!! so now its all i make..i do about 4 cups of it so theres enough

this is how i do gravy..

4 tablespoons of cream cheese
1/4 teaspoon xanthan gum mixed well into 1 tablespoon of butter (dont skip mixing it with the butter..or you may end up with a gloppy mess)
2 cups turkey drippings/chicken broth mix (add the broth if you dont have enough drippings)
heavy cream

melt the cream cheese in a pan. whisk in the drippings, then the xanthan gum/butter mix.
add heavy cream to the consistancy you like and whisk...bring to simmer while whisking constantly.

i will tell you..i do this without the xanthan gum and it works fine..but if you want more of a traditional gravy "feel" use it. i learned the butter trick from another poster..usually they tell you to sprinkle the xanthan gum over then mix fast..but it always clumps up...mixing it well with the butter (use the back of a spoon to mash it in well) seems to prevent that from happening.

here you can get brand name knox...its in with the jello brand boxes. i think its in an orange box? i get it in bulk from the food co-op.

you can also make your own chocolate chips...easy peasy if you want the recipe let me know.

I am keeping that brownie recipe, Night. I cannot find the choc chips with erythritol over here so all I do is break up some of a Lindt 90% chocolate bar to make choc chip cookies, so I can do that with this recipe too. I'll also have to search for gelatine but I know it is out there. Thank you again!

Link to the brownies...i made them again today..leaving out the chocolate chips and adding in a quarter cup chopped walnuts. they are just wonderful

follow the directions. i didnt buy grass fed gelatin i used what i get in bulk from the co-op and it works just fine. I would think knox unflavored would be just fine for them. I used Bake Believe sugar free chocolate chips made with erythritol. half the price of lilys, and really good, in the first baking of them. last test was i took a frozen one out and thawed it. just wonderful..no problems.

so i can, with confidence, say these are as good if not better than "real" brownies. Oh..and do use a whisk to mix them. or a fork if you dont have a whisk. i think a mixer would over mix them. and doing it this way..all there is to wash is one mixing bowl (i melted the butter in the microwave in my glass mixing bowl, mixed in the swerve, let it all cool for 5 mins then added the eggs and the rest.) the whisk, and a 1/2 cup and 1/3 cup measure, and the spoon measures. clean up was less than 5 mins. mixing is less than 5 mins. magic recipe this one is!!!

I suspected that, Holly. Guess we won't be able to have cranberry sauce. That's OK. We never get fresh ones in the shops in Australia. When I was a child in Northern Canada I would pick them wild. They were little but good.

Keto cranberry sauce

Use the directions on the package. Replace the sugar with approved sweetener. I use allulose or bochasweet so it doesn’t get grainy when chilled..but I actually like the texture when it’s grainy myself.
I served this to everyone last thanksgiving and it wasn’t till someone saw me take a spoonful that I was asked if I was taking the day off from keto. No one knew it was not made with sugar!

Night, you are right. I misread! There's only .5 of a carb in a teaspoon of vanilla essence. So each cookie really has 1.95 carbs in it. That's close enough to 2 carbs per cookie to me.

Holly, you are amazingly generous. Thank you so much for this recipe. I would definitely chill them as it is a hot summer over here already. I find I had to wait for the traditional recipe to cool after baking before i rolled them in icing sugar and even then they sometimes turned ot crumbs. Sounds like they are behaving like my original recipe, the one with heaps of sugar and carbs in it!

I tried to save you the pain of calculating how many carbs there are in each of these Keto cookies. I worked out the only carbs in the recipe are in the almond flour (36g) the vanilla essence (4.2g) and the 3/4 cup of pecans (10.4g) so that totals 50.7g carbs in the recipe. If you make 24 cookies, you have 2.1125 gms of carb per cookie.

Is that sounding right?

I trust very few sites with the nutrition info anyhow. While I hate doing the figuring I generally check it all myself to be sure.

Now..some changes i made..and some hints.

edited to add...DO CHILL THE DOUGH!! i think they would have made a puddle had i not chilled them for the hour as written. these took literally less than 5 mins to mix..including hand grinding the nuts. and i left them in for 1 min longer than the 10 mins listed. ovens will vary so i would check them at 9 and go from there. these were golden on top, and still had give to them when i took them out. again dont roll in the powdered swerve till cool..i did try with one and got a mess.

I used walnuts instead of pecans, and just ground them in my little hand nut grinder i've had forever. IF you use a food processor as the author suggests, be careful, or you will have nut butter.
i also used probably 3/4 cup of nuts, not a cup. thats a LOT of nuts.my own bakery recipe only uses 3/4 cup ground walnuts to 2 1/4 cups flour and makes 3 dozen cookies. so this was way more nuts than needed..it was hard enough getting 3/4 cup to fully mix in.
i used swerve powdered sweetener not lakanto.

now heres the big change. recipe says take out of oven and immediately roll in the powdered sugar, like you would with the originals. you cant. they are soft at this point, and will fall apart and you will have a mess of half cookies and crumbs. i sifted the confectioners swerve over. then when they cooled and became firm i rolled them. and i needed more than the quarter cup to do both.

lastly..it says it makes 18. they would have been huge..i made 24. She only gives net carbs, and i didnt figure them and dont have time now but will try to get to it.

I'd say they are a win and would make them again for the holidays!

You can use regular erythritol it just won’t be as dark in color. I’d add more spice, also.

Yum, Holly! That's a favourite of my sister's. I shall let her have the link too. It looks good. I would eat a piece of that. If you put whipped cream on top it would be yummy too, I am guessing!

Oh, I see it uses keto brown sugar. Is that necessary, do you think? Could I just use Erythritol or Natvia? I haven't been able to locate a brown keto sugar in Australia. I would also leave out the caramel sauce unless I could learn to make it.

SILs knee replacement surgery went good with no problems. Surgeon said the knee was just trash. She had some screws there from an ACL surgery many years ago but they were not a problem.

Question about the gingerbread. It says grease the pan. In keto is there something specific I should use?

So my biggest tip is bring some food to an event that you can eat. Others can try it - or not. But at least you know you will have SOMETHING keto.

I'm all in with pumpkin this time of year. Holly, I went to the link you added and searched for the pumpkin cheese cake. What came up was Keto Instant Pot cheese cake. Is this the cheese cheese cake you mentioned? I would never have thought of using a Instant pot for cheese cake.

i'll start off.

I have some REALLY wonderful keto cheesecake and cake recipes. people seriously cant tell the difference, and with the cream cheese buttercream think its something even MORE special.

Please post any of your special keto recipes to get through.

also..plan your meals before you get into trouble. My first year on keto i was determined to go OFF for thanksgiving. after all,,you have to live right (sorry that statement gets me every time..i want to live, thats why i do keto!!)
but i was feeling so good, i found ways to stay keto. i hated..HATED the cauli mash. i was angry and disappointed with it. buy my loaded broccoli? and my keto cranberry sauce? made up for it. i made keto pumpkin pie for dessert...but was in shock when everyone liked my cream cheese gravy better than the normal turkey gravy!!

YOU CAN do this!!
