I like a sandwich full of vegetables, too. Cucumber sandwiches...fried green pepper sandwiches are two of my favorites.

Using 6 slices of low-cal bread, spread each with low-cal vinegar based salad dressing such as raspberry vinaigrette. You're going to make a layered sandwich. Put sliced cucumber, sliced banana, chopped black olives, Swiss cheese, thin spreadings of liverwurst, mixed salad greens.

Take 2 slices of whole grain bread, fry slices of green pepper, make a sandwich.

SALMON BLT SANDWICH

Ingredients
8 bacon slices
1/2 c. low-fat Greek yogurt
1/2 c. fresh dill, roughly chopped
1 scallion, finely chopped
1 lb. skinless salmon fillet
Salt
Pepper
1 tbsp. oil
4 thick slices toasted bread
Lettuce
Tomato
Cucumber salad, if desired

Directions
Cook bacon until crisp.
Combine low-fat Greek yogurt, fresh dill, scallion, and 1/4 teaspoon each salt and pepper.
Cut salmon fillet into 4 thin pieces, season with 1/4 teaspoon each salt and pepper and cook on medium in oil until opaque throughout, 1 to 2 minutes per side.
Spread yogurt mixture over 4 thick slices toasted bread and top with lettuce, sliced tomato, salmon, crisp bacon, and 4 more slices toasted bread. Serve with cucumber salad if desired.

Sandwich Diet

1st Sandwich acceptable for weight loss is -

1. very thin 100% whole wheat bread
2. 3 oz turkey white meat
3. 1 teaspoon honey mustard spread
4. 1/2 cup raw veggies (lettuce, tomato, onion, bell pepper, roasted red pepper, shredded carrots, etc.)
