Cauliflower, instead of potatoes, is a worthy contender! There are lots of cauliflower-faux-mashed-potato entrees in the grocery freezer. BUT, if they're available at the store, you KNOW they can be made at home. If you find recipes and/or like to experiment with figuring out recipes for flavorful faux mashed potatoes, please feel free to share with the team. I'm on the search for recipes. Idk how many will be slow cooker cauliflower recipes, but, ya never know what ya might find! emoticon

This is not a slow cooker recipe. But, if you want to make a diff kind of baked potato, look up Hasselback Potatoes on Pinterest. I've made them a few times & everyone always likes. The thinner you slice the potatoes, the better. But, you also can't go wrong. That's what I like best about the recipe. If you try them, plz tell me what you think & how you prepared them. (There are a few diff versions, but, all close to the same.)

Here's something I'm adding here so that you can use it as a base recipe. I've added my recommendations.

CROCK-POT POTATO CHOWDER

Recipe by stacylu at Genius Kitchen

ABOUT THIS RECIPE
"Another of my aunt's recipes. Great for those cold nights."

INGREDIENTS
8 cups diced potatoes _ga- if you can combine potato and sweet tator
1/3 cup yellow onion, chopped
2 (14 1/2 ounce) cans chicken broth
_ga- 1 can creamed corn
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (8 ounces) package cream cheese, cubed, softened _ga- I'm going to use Greek yogurt
1/2 lb bacon, cooked and crumbled _ga- I'm using luncheon ham if I add meat.
green onions or chives

DIRECTIONS
Combine potatoes, onion, broth, and cream of chicken soup in crock pot.
Cover and cook on low 8-10 hours or until potatoes are tender. _ga- here, I'd mash 2C to thicken
Add cream cheese and blend.
Top with bacon and chives before serving.

SIL gave me a new potato recipe, called GRUB. It had a diff name, but, someone once commented "This is good grub!!" and the name stuck. emoticon After an online search (inorder to change it to a slow cooker recipe), here it is:

Use a 3 1/2 to 4 qt slow cooker; spray crock with non-stick cooking spray.

GRUB

2 boxes AuGratin Potato mix. (I used a brand name, but, store brand is fine! Approx 4.7 oz boxes.)

1 (14-16 oz size) canned corn, drained

1 lb ground beef, fried separately & drain off fat

1 (8 oz) pkg shredded cheddar cheese

2 C milk

3 C boiling water

Spray crock pot with non stick cooking spray. Using a LARGE bowl, mix dried potatoes & seasoning mix from the AuGratin mixes (but DO NOT follow cooking instructions from the box mix!), corn, fried ground beef, shredded cheese, and 2 C milk. Stir together & pour into crockpot. Finally, add the 3 C boiling water into crockpot . Gently stir.

I cooked mine on high for 2 hrs & 10 min; after which, I propped lid, for steam to escape for 5 min. After a total of 2 hrs 15 min, slow cooker is off; giving time for sauce to thicken.
My slow cooker tends to run hot, so plz use your best judgment to adjust cooking times... especially, the first time you make this recipe. If cooking on low is desired, you can try cooking on low for 4-5 hrs; but, I would watch it closely after the 4 hrs. Even tho I had sprayed crock with non-stick spray, there were still areas at the bottom of crock that were almost burnt. These are reasons I don't like to leave my slow cooker on while I'm not there to watch it. Since you are familiar with your own appliance, you may be able to adjust times after you've fixed this for the first time. It turned out really good. I was happy with the result.

I am sharing a recipe that LOIS shared awhile back. It sounds really good. Even tho this is a recipe meant for the grill, I think that it could also be fixed in the crockpot. Going to try this out, this week. I, too, have a bag of potatoes that I need to use. Here goes:

I saw this on FB the other day using small red potatoes. Slice them thick. Place in bowl. Drizzle with olive oil, lemon juice. Add salt, pepper and half pkg of Ranch Seasoning Mix. Stir to mix onto potatoes. Thread potatoes onto metal skewers and place on grill for about 15 minutes, turning once. Serve with a little Ranch dressing with the potatoes. They were quite yummy.

**When I made these, I skipped the part about putting the potatoes onto skewers. It actually worked real well, tasted great. I currently have some baby potatoes that I want to cook up tomorrow. I will either try this, or slightly different...depending on what recipes I might find online. I'll let you know.

Anyone ever cook baked potatoes, in the crockpot? (Wrapped in foil.) I've been to a few pot lucks where they kept the foil wrapped potatoes warm, in the crock pot. I'm not sure if they baked them, that way, or just kept them warm.... I'm sorry if we've had this discussion (in this group) already. LOL. If they can be baked in the crockpot, that would be great. There's only 2 of us & its summer. Those are 2 reasons I don't really want to use the oven....just for a few potatoes. The last few years, I've just boiled potatoes, instead of baking them. Maybe this is something I could use my small crockpot for? emoticon

Sometime after posting this, I went searching for my fave Potato Soup recipe. With all our moves in the last few yrs, I could not find it. We sold our house & downsized, considerably. I got rid of many things. when I got rid of a cookbook, I copied down my fave recipes. I still have one other place I can look for this recipe. I admit that I was freaking out a bit. In the meantime, I searched thru my favorite online recipe sites, for something similar. It's really very easy. It uses 5-6 potatoes, peeled & cubed, sliced celery, chopped onion, boiling it all down with just enough water. I usually cut the amount of liquids in half, for a soup recipe. Once the potatoes are softened, I add the milk (sometimes it's just a can of evaporated milk) & thicken the soup by adding a lil flour & water (that I have shaken together in one of those shakers.) I continue to simmer the soup until its the consistency I like. SIL adds ham cubes; that's a nice addition. I've also made it with adding some chopped broccoli. Both are good additions. This could very easily be adapted for the crockpot. For feeding a crowd, once, I had made the broccoli version & served the whole thing in a 6 qt crockpot (as I had doubled or tripled the recipe, so it filled UP the crockpot.) The only seasoning in this soup is salt & pepper to taste. It always gets rave reviews. It's simple, but good. Again, I'm going to continue to search for my written recipe. Until then, I will have to wing it.

I've had a favorite Amish potato soup recipe, for years, but it isn't made in the crockpot. I'd like to adapt it for the crockpot. It's very simple & can be modified to add ones favorites (with or without broccoli added; with or without cubed ham pieces.) The original recipe had one peeling & quartering potatoes, boiling them down & then mashing them. However, I like chunky soups. I've never pureed the potatoes; didn't think that was even necessary. I will come back to this thread with a crockpot version of the recipe & with its variations. I think the crockpot is wonderful for chunky soups. emoticon

German Potato Salad w/ Kielbasa

Slice russetts and place in crockpot until crockpot is halfway full
Slice kielbasa coin-size pieces then place on top of potatoes
In bowl, pour water, vinegar, sugar, pepper and some oregano then stir.
Pour mixture over potatoes and kielbasa.
Cook on HIGH 3 hours.

Serve.

Cover bottom of crock with boneless country style ribs
add one cup of chicken bouillon
2 cloves chopped garlic
1 chopped onion
cook on high for 4hrs
add 1 can sauerkraut
place 1 layer of whole red potatoes
add one layer of whole carrots
black pepper to taste.. sauerkraut and bouillon has a lot of salt so be careful with salt
set on low and cook till veggies are tender. about 4hrs.

MY FAMILY LOVES THIS WITH ANY VEGGIE LIKE BRUSSEL SPROUTS, BROCCOLI, CAULIFLOWER, CORN ON COB, PURPLE POTATOES, GOLDEN POTATOES OR WHAT EVER IS IN SEASON. CAN ALSO SUBSTITUTE RIBS WITH CHICKEN THIGHS, QUARTERS, LEGS OR BREASTS. SERVE WITH LARGE BLOB OF NO FAT PLAIN YOGURT INSTEAD OF BUTTER OR SOUR CREAM TO REDUCE CALORIES
