Yesterday, we went to a potluck. Instead of cooking up a roast, I used a lb of slim sliced steak (nothing fancy), a bag of those baby yellow potatoes, and a bag of baby carrots. (It was like a miniature version of a pot roast. LOL) . I then sprinkled an envelope of onion soup mix & enough water to almost cover everything....def enough water to cover the meat. Turned the crock-pot on high for 4 hours. When it was all said & done, I tried making a gravy out of the liquids (in a saucepan, with a couple Tbl of oleo & equal of flour + the liquid. I was in too much of a hurry, tho, and didn't thicken it very much. So, I'd say to make the gravy the way that you usually do (if it is to let it thicken up in the crock-pot, or ?) . I've had good success with putting 2 Tbl of flour + 1/4 water into one of those shaker bottles & adding it to the liquid, for making gravy. (I just didn't have time to search for my shaker bottle....) . emoticon

Cooked up the simple pork chop recipe. As mentioned, I added potatoes. My fault (for stacking the pork chops in the middle of crock) b/c it meant that 2 of the chops cooked in liquid & 2 did not. The potatoes turned out perfect. Half hour before we ate, I took the chops out and sliced in half inch slices & put back into crockpot. I should've done that sooner OR made sure that all 4 chops were cooking IN the liquid & NOT above it. Recipe was simple & good. I thought it was maybe too salty; DH did not think it was too salty. So, I guess that's personal preference. A couple TBL of FF sour cream could've been stirred in at the very last; an optional addition. I did not try that, but, I think that might help with the salty-ness. I'd love to hear if others have tried the recipe (or any other recipes shared in this team) and let us know how it went & any of the additions/alterations you've tried. I like to experiment with recipes.

I had 4 boneless pork chops, in the freezer; so, I am trying out that new recipe (I recently shared in the "share a meat recipe" thread.) It only has 3 ingredients: pork chops, cream of chicken soup & dry ranch dressing mix. Can't get much simpler than that! I'll let ya know how it turns out. What are y'all cooking today?

Update: It's in the crockpot. I just had 4 pork chops, so I layered them with the cream of chicken soup (stacked in the middle of the crock.) . I have a 3 1/2 qt crock & there was room for more; so, I added six red skinned potatoes (that I put along the sides of the pork chops. It keeps the stack of chops from falling over. LOL.) . I will update, later, after all has cooked. emoticon

That sounds really good, Elisa. Makes me want to fix one, with one of those small pkg's of baby potatoes. Mix that with a bag of baby carrots 'n YUM.

Here is a good meat & potatoes dish that Denise shared for our Oct recipe of the month: emoticon

i saw this and it's easy to make and change it to your taste.

Crock pot Hamburger Potato Casserole

Ingredients you need for crock pot hamburger potato casserole:
5 small potatoes
1-2 lbs of ground beef, browned
2 cans of cream of mushroom soup
1 cup of milk
salt and pepper to taste
1 1/2 cups of shredded cheese (used cheddar but any kind would be great too)

Directions:
Brown your ground beef and set aside
Peel and slice potatoes and set aside. Use a mandolin slicer to cut our potatoes quickly.
In a mixing bowl, combine cream of mushroom soup, milk, salt and pepper to taste. Mix well. Set aside.
Spraycrock pot casserole dish with non stick spray.
Layer in the pan, potatoes, beef, soup, and cheese. Then repeat. Top with remaining cheese.
Place lid on top.
Cook on high for 3-4 hours or until the potatoes are soft.
Turn off the crock pot and allow it to cool slightly (about 10 minutes). This will allow the casserole to thicken.
Cut and serve with your favorite vegetable

From scrolling thru older posts, here is a good CHICKEN recipe from MomofConnor:

RANCH CHICKEN AND STUFFING

1 package of chicken breast (3)
1 box of chicken stove top
1 dry package of hidden valley ranch
1 and 1/2 cups of chicken broth
8 ounces of frozen peas and carrots

Spray crock pot with non stick cooking spray. put in stovoe top stuffing, frozen veggies, places chicken on top of stuffing and veggies, pour broth and then sprinkle with ranch seasonsing. You may want to mix a little if too much ranch on the chicken. Cook on low for up to 8 hours or on high for 4 hours.

Lean Turkey sausage links, 12oz frozen cauliflower, 10oz Refried Beans, 8oz Yellow corn, 1/4 bell ppr dic'd, 1 sm yellow onion dic'd, 2 svgs Tillamook Sharp Cheddar Cheese, 4oz water; Slow cooked, 5 hrs. Used garlic granules, gr cummin, Fiesta brand Mesquite fajita seasoning, splash malt vinegar.

Halfway through, mush most of the cauliflower up, stir real well. I let it sit for about 15min and then loaded up 2 flour tortillas, added plain Grk yogurt and shredded Romane lettuce. I used green chile sauce and Grace Jamaican Scotch Bonnet sauce, my wife just used the green chile.

And we've got plenty for leftovers. That leaves room for chocolate! hahaha

3 lg boneless skinless chicken breasts cut into thirds
1 can cream of mushroom
1 can of water
1 tsp soy sauce
1 can Libby's corn, drained
1 small bag of baby carrots minus a serving
Chopped yellow onion to taste...maybe 1/4c
10 small celery stalks cut into bite size pieces
Salt and pepper to taste

Add everything but the corn to a crockpot. Cook on high about 4 hrs. Then add corn and cook an hour to hour and a half longer. Drain off some of the liquid, divide into 5 meals in Tupperware container, and allow to cool. Then put it in the refrigerator. When you are hungry for a warm meal, heat in the microwave at medium for a few minutes and you're eating a healthy meal!

My goal, at the moment, is to always include meat in my crockpot batch cooking. A green smoothie gets my fruits and veggies for the day.

Cooked my pork loin yesterday in the crock pot again and the family was happy. I need to search our archives for some new crock pot recipes now that summer is coming I do not want to spend my summer in the kitchen.

This was a recipe posted up a long time ago but I had not tried it. I did make a couple alterations as the other recipe had a link to the Cajun seasoning recipe and I just used Mccormicks. It turned out great.

INGREDIENTS
3 boneless skinless chicken breasts (frozen or thawed)
1 1/2 lbs andouille sausage, sliced into rounds
2 cups chicken broth
2 14-oz cans diced tomatoes
1 medium white onion, diced
1 green pepper, seeded and diced
1 stick celery, diced
1 Tbsp Cajun spices ( used Mcormicks)
1 tsp Worcestershire sauce
2 bay leaves

Cooked White rice

Place chicken in crock first and then sausage and then other ingredients. cook on low. Recipe said for 8 hours however I checked my crockpot at 5 and it was done. My chicken was not frozen so maybe I had used frozen chicken breast it would have taken the full 8 hours (My large crock pot cook quick) so I turned it off. Take chicken out and pull apart and place back into pot and mix. Serve over cooked rice or you can add cooked rice into pot however you prefer when ready to serve.
