Well, the name for the eggs is a family name, so that is where that comes from. My sister's DH's family used to do something similar, but they cut the yolk up in the cream sauce as well. I grate the egg yolk in a cheese rotary grater. The fine screen makes it better than if you use a coarse grater. When I was little, my mom used a fine strainer - which was a huge PITA! So the discovery that a cheese grater (you might see them in restaurants for Parmesan cheese) was a great discovery. I suspect a microplane grater would work well too. Your meal sounds impressive - and then to have cut back! Yikes!

We're having guests, so I'm making The Traditional Italian Easter Dinner: antipasto, lasagne, salad, garlic bread, lamb cake...probably wine, too. Traditional in my family, anyway. Moderation in portion sizes will be the only way I make it through the day! Since I'm not making the antipasto and garlic bread, they probably won't be my favorite recipe, so I plan to skip those, at least. And my limit is usually only 3 oz. of wine. You won't believe this, but I have actually pared down the menu from The Tradition: I'm not serving mixed nuts, a cheese tray, bruschetta, spaghetti and meatballs, bracchiole, pizzelles, cream puffs, or ice cream--so I'm escaping those, too.

I'm intrigued. I've never heard of Goldenrod Eggs. How in the world do you grate egg yolk? Please enlighten me!

I forgot to mention - for the second year in a row, I'm baking my eggs! Much less stress for me. I will not overload my oven though!

Moderation in all! It works better than anything else for me. I saw that spark had an article on the home page today about lighter eating for Easter - but if I don't make Goldenrod Eggs for breakfast (Egg white in cream sauce w/ yolk finely grated over the top - all on toast) I'll lose my Mom credentials! I figure that will get some protein in the kids and I don't actually make it w/ cream (Yeah, I know - I do use butter!)

We're doing something different this year, an Easter BBQ with grilled chicken and beef kabobs. Planning on just tasting potato salad and pasta salad and eating plenty of garden salad.

With Easter coming up next week, I am looking at a holiday menu on Sunday, complete with chocolate, cake, potatoes, cheese...all the "forbidden" stuff! What is everyone planning to do to keep this holiday under control? I need some fresh ideas! Thanks--
