Never tried using it instead of butter, i shall give that a go. Sometimes i use cream cheese instead of butter, in an egg sandwich or a cheese sandwich. It's quite good!

Love Quark! I grew up using quark instead of butter on my toast. It is getting easier to find. For a long time, the only place we could get it was at a German deli. But now as more stores have specialty cheeses, I can sometimes get it at my neighborhood grocery.

Teadrinker,
a low-carb diet needs to be a high-fat diet or you are going to consume too few calories or too much protein. I would go for cream cheese or at least full-fat quark.

Quark is great for cooking and baking. It's low in fat and high in protein. I think you can just up the cottage cheese and the egg and skip it all together... or using cream cheese. But i guess the low fat cream cheeses are not "cookable"?

It's very common in Europe. I grew up with it in Germany. It's kind of like a cross between yogurt and cottage cheese and cream cheese, but no lumps. It is used to make cheese cake and also eaten raw like yogurt, even used for cake batter. It comes in full-fat, low-fat and fat-free. In the US some health food stores carry it. It is a form of fermented milk.

ahhh. I had no idea what quark was. I thought the cottage cheese was the substitute for cream cheese. I should have googled it : )

Actually quark, especially low-fat, may be much higher in carbs than cream cheese so I would go for cream cheese, maybe mixed with a little heavy cream or whipped cream instead.
I use 3-4 packs of cream cheese with 2 tbsp. Xylitol for sweetener plus vanilla extract.
