Really... a muffin for only 150 calories and it includes chocolate... emoticon

I'd have to buy too many ingredients to make them. I don't keep most of those items in the house, but it's good to know we can have a healthy bit of chocolate.

Here's a yummy breakfast muffin!

150-CALORIE CHOCOLATE CHIP ZUCCHINI MUFFINS

INGREDIENTS:
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
3 teaspoons cinnamon
3/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup mini chocolate chips
2 eggs
1 1/2 cups unsweetened almond milk
1/2 cup light agave nectar
1/2 cup coconut oil, melted and cooled to room temperature
2 teaspoons vanilla
3 1/2 cups shredded zucchini

INSTRUCTIONS:
1. Preheat oven to 350 degrees F. In a large bowl, combine whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, salt, walnuts, and chocolate chips. Set aside.

2. In another bowl, mix together the eggs, almond milk, agave, coconut oil, and vanilla. Fold the wet ingredients into the dry ingredients. Add shredded zucchini. Mix until just combined.

3. Spray a muffin pan with nonstick cooking spray. Fill each cup with batter. Bake muffins for 20–25 minutes. Let cool. Enjoy!

Brenda-you are doing great! I have way more to lose than you do! I have to try and keep it up as I am traveling this next week. Going to visit my aunt who has cancer. Traveling with my mom, dad and sis. So eating out a lot. I'm going to do my best to at least maintain this week and drink lots of water!

BEEF WITH MUSHROOM SAUCE
From: Diabetic Living Magazine
4 servings
Prep: 20 min
Ready In: 30 min

INGREDIENTS
⅛ teaspoon black pepper
4 (3 ounce) beef eye round steaks, trimmed of separable fat
1 cup sliced fresh mushrooms
cup sliced green onions
2 cloves garlic, minced
2 teaspoons butter or margarine
2 teaspoons cornstarch
⅔ cup low-sodium vegetable juice
teaspoon instant beef bouillon granules

PREPARATION
Rub pepper over meat. Place meat on the unheated rack of a foil-lined broiler pan. Broil 4 to 5 inches from the heat until desired doneness, turning once. Allow 10 to 12 minutes for medium rare (145F) or 12 to 15 minutes for medium (160F).

Meanwhile, in a saucepan, cook mushrooms, onions, and garlic in hot butter until vegetables are tender. Stir in cornstarch. Add vegetable juice and beef bouillon granules. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Keep warm while cooking meat. Serve the sauce over meat.

My scale weighs in tenths so I round up or down - Wk 3 was 267.6 and today was 262.4

I have been sicker than a dog for the last 4 days. Sinus infection trying like hell to get into my lungs. I've seen a doc, and have an antibiotic, but this coughing every night...all night...is wearing me out.

I did an 18 minute Zumba video. It started out by saying "Have fun and remember treat your body every day." That's a new way of looking at exercise. I'm treating my body!

Sorry missed yesterday. My schedule gets all screwed up when the kids are home from school. They decided it was too cold to send them since the wind chill was -53. I think I will agree. Mine youngest is in portables so he has to go outside to get to his classes. You know that middle schoolers aren't the best on wearing their coats!

It is 0 now with -15 wind chill. Heat wave!! Supposed to be in the 20s tomorrow! Crazy weather! Kids are back to school and we have basketball games this afternoon.

I am already down 3 of the 5 lbs I gained. I am sure a lot of it was water weight gained because of the high sodium in a lot of the foods I ate over the weekend.

ASPARAGUS HAM DINNER

Makes 6 servings

INGREDIENTS
2 cups uncooked corkscrew or spiral pasta
3/4 pound fresh asparagus, cut into 1-inch pieces
1 medium sweet yellow pepper, julienned
1 tablespoon olive oil
6 medium tomatoes, diced
6 ounces boneless fully cooked ham, cubed
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 to 1/4 teaspoon cayenne pepper
1/4 cup shredded Parmesan cheese

DIRECTIONS
Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to vegetable mixture. Stir in parsley and seasonings. Sprinkle with cheese.

1-1/3 cups: 204 calories, 5g fat (1g saturated fat), 17mg cholesterol, 561mg sodium, 29g carbohydrate (5g sugars, 3g fiber), 12g protein.

Wendi, same here with the weather. And schools are closing all around. Businesses as well. I say suck it but buttercups I have to work lol

Wendi I know it has been bitterly cold. School and all activities have been canceled in the surrounding areas of Mobridge - even Aberdeen, SD canceled school and don't think that ever happens. Called my mom today (she is 90) to make sure she was staying in as today and tomorrow are her card playing days. Cards was canceled.

Only 30 degrees here today.

I love chicken. People always say my food groups are candy and chicken.

I did not weigh in on Friday as I was very busy but weighed in on Monday and I was up many many pounds. Weighed in at 267.6 which I think is about the highest I have ever been. Got lots of steps but eating and drinking left a lot to be desired - especially the salty things.

Dee-just use a small boneless roast instead of the chicken. Should be just as tasty!

Sorry I didn't post an exercise of the day yesterday. We were traveling. Went to visit colleges again. My son got into the program he wants after doing some testing. So happy! We traveled in crazy weather but we made it safely. Just in time to get home before the COLD hit. -17 air temp this morning with a -45 wind chill. But the sun is shining! Kids had school but they did cancel all activities for after school. Supposed to be this way today and tomorrow and then warm up. Glad it will be short lived!

JOY BAUER'S LOW-CALORIE CHICKEN ENCHILADAS
Servings: 8

INGREDIENTS....

PULLED CHICKEN FILLING
1½ pounds boneless, skinless chicken breasts
½ cup salsa, homemade or store-bought
1 teaspoon garlic powder
½ onion, finely chopped
2 teaspoons taco seasoning

ENCHILADAS
2 cups enchilada or taco sauce, homemade or store-bought
2 cups shredded reduced-fat Mexican-blend cheese
16 small tortillas (corn or flour)

PREPARATION
To make the pulled-chicken filling, add all the ingredients to a slow cooker and set on high for 4 hours or low for 8 hours. When the chicken is done (you’ll notice a large amount of liquid in the slow cooker; this is normal), shred it with a fork until all of the liquid within the slow cooker is incorporated.

To make the enchiladas, preheat the oven to 350°F. Coat the bottom of two 9 x 13–inch baking pans with a thin layer of the enchilada sauce.

Microwave the tortillas for about 30 seconds to make them warm and flexible. Place one tortilla at a time on the prepared pan, spreading 1 heaping tablespoon of enchilada sauce evenly over the top of each, adding ¼ cup pulled chicken, and rolling it up. Place the fold sides of the enchiladas underneath, to keep the enchiladas from unraveling. Repeat this process with the remaining tortillas and filling.

Once all the enchiladas are set, spread the remaining enchilada sauce over the top, and sprinkle on the cheese. Place in the oven for about 15 minutes, until the cheese is hot and bubbly.

Note: To heighten the flavor, add a dash of cumin, cayenne pepper, red pepper flakes, or any other preferred seasonings on top of the cheese. Serve the enchiladas with chopped tomatoes, cilantro, scallions, salsa, light sour cream, or nonfat plain Greek yogurt.

INGREDIENTS
2 tablespoons extra-virgin olive oil

1 small green bell pepper, diced

1 small red bell pepper, diced

1/2 small red onion, thinly sliced

2 cups packed baby spinach

1/4 cup sun-dried tomatoes (not packed in oil), chopped

1 clove garlic, sliced

10 large eggs, beaten

Kosher salt and freshly ground black pepper

Hot sauce, for serving

DIRECTIONS
Preheat the oven to 375 degrees F.

Heat the oil in a medium oven-safe nonstick skillet over medium-high heat. Add the bell peppers and onion and cook, stirring occasionally, until softened, 6 to 7 minutes. Add the spinach, sun-dried tomatoes and garlic and cook, stirring frequently, until the spinach is just wilted and still vibrant green, about 1 minute.

Reduce the heat to low and add the eggs, 1 teaspoon salt and a few grinds of black pepper. Stir gently to distribute the vegetables. Bake until the eggs are set, 13 to 15 minutes.

Let stand for 5 minutes, then slice into 6 pieces. Serve with hot sauce. Refrigerate in an airtight container for up to 1 week.

INGREDIENTS
8 cups 1-inch-thick slices cauliflower florets, (about 1 large head; see Tip)

2 tablespoons extra-virgin olive oil

1 teaspoon dried marjoram

¼ teaspoon salt

Freshly ground pepper to taste

2 tablespoons balsamic vinegar

½ cup finely shredded Parmesan cheese

PREPARATION
Preheat oven to 450°F.

Toss cauliflower, oil, marjoram, salt and pepper in a large bowl. Spread on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 15 to 20 minutes. Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

Tip: To prepare florets from a whole head of cauliflower, remove outer leaves. Slice off the thick stem. With the head upside down and holding a knife at a 45° angle, slice into the smaller stems with a circular motion—removing a “plug” from the center of the head. Break or cut florets into the desired size.

Cut Down on Dishes: A rimmed baking sheet is great for everything from roasting to catching accidental drips and spills. For effortless cleanup and to keep your baking sheets in tip-top shape, line them with a layer of foil before each use.

Go for week 2!!

WHITE BEANS, SPINACH AND TOMATOES OVER LINGUINE
Time: 30 min
Calories: 284
Serves: 6

INGREDIENTS
2 tsp olive oil
6 servings (12 oz) whole-grain linguine
1 Tbsp minced garlic
2 (14.5 oz) cans diced tomatoes with basil, garlic and oregano (do not drain)
1 (14.5 oz) can white beans (like Navy or Great Northern)
1 (10 oz) package Fresh Express baby spinach
6 Tbsp Romano or Parmesan cheese (grated)

DIRECTIONS
1. Heat oil in large non-stick skillet.

2. In a large pot, start boiling water for linguine, and get linguine cooked while you continue.

3. Add garlic to skillet, and saute for a minute or so.

4. Add the tomatoes and beans and bring to a simmer.

5. Add the spinach, cover, reduce heat to low and simmer about 10 minutes. Stir occasionally.

6. Spoon tomatoes/beans/spinach mixture over linguine and sprinkle with cheese.

This makes 6 servings of 1 cup of pasta, 1 cup of sauce, and 1 Tbsp of cheese.

Consider this:
Car lost its steering (bad)
friend loaned me a car (good)
loaner has expired tabs and no insurance (bad)
called to add car to insurance and found out we are all being dropped (bad)
found another insurance carrier (good)
found out my hubby was dropped from his COBRA health insurance (bad)
found out hubby is now eligible for insurance thru work (good) for very VERY cheap (extremely good)...don't understand this, as he is part time, just like before, but whatever!
work screwed up my paycheck (bad)
in my favor, but they cashed in ALL my vacation time (bad)

It has been an extreme roller coaster week, and its miraculous I didn't gain 10 lbs! That I maintained is pretty darned good!

If stress could burn fat, I'd be skinny and if chocolate could add brain cells, I'd be a genius!
