Hi TEADRINKER7,

Plant-based = vegetable, legume, grains, fruits, seeds.

So if you're following a strict vegan, plant based diet, you won't eat dairy (milk, cheese or any derivatives), eggs, fish or meat of any type.

That said, yogurt or cream (made of dairy) are out of the equation. There are several replacements.

There are several non-dairy milks: made from almond, soy, oat, rice, coconut, among others.
There are even non-dairy cheeses - google "Daiya"
There are several non-dairy "yogurts", the ones I've found are made from soy or almond.

I'm not saying these are healthy non-processed foods, but at least there are alternatives for those who are following plant-based diets and want to indulge with something that looks and tastes like the usual standard american diet staples.

The plant based yogurts are awesome - yes, they are processed foods though but it's one of the only things I've accepted :)

I've tried several flavors, all of them based on soy. They aren't too easy to find in regular grocery stores but they are worth a try.

For creaminess in soups and other dishes, a bit of non-dairy milk, blended pre-soaked cashews or blended cannellini beans help. You can always make a bechamel/white sauce (non-dairy milk + whole wheat flour) or even cornstarch for better texture.

For desserts, if you aren't worried about calories, there are several recipes on how to make a sugar-glaced mix to pour on cakes, muffins, etc. I haven't tried them since most of them are loaded in sugar but maybe there's a low fat/low sugar version out there.

DH LOVES it - i make it with a small can of green chilies, a lot of frozen peas, and some sliced green olives.

regarding creamy - if you live somewhere where they sell whole soy yogurt, it is fabulous. if you live in europe and can get alpro soy yogurt or oatley oat (!) yogurt, they are both excellent (plain). otherwise, i put a potato in my soups, or white beans, to get them creamy. i stay away from cashews because i feel it usually leaves me feeling a bit bloated, like i've had too much fat.

Last time, I used sweet potato in my soup also boiled eggplant worked as well.
I puréed both of them when I made my soup. For the pasta sauce I think white bean should work. Good luck and Happy new year!

Yes, you can ferment soaked blended nuts to make nut yogurts, nut cheeses, nut milk kefir. I make wonderful cheese cakes using nut cheese. You wouldn't know the difference. Nuts can be blended into creamy sauces, seasoned, flavored to duplicate cheeses. There are several vegan cheese books on Amazon. Youtube has many videos on the subject.

What do you use to make stuff creamy? for example if you make bean pasta (pasta made from beans) with mushrooms, normally i would have some Greek yogurt in there or some cooking cream... what to use instead?
I guess I could do tomato sauces but it gets tiring just doing tomato based sauces...
