Just a quick comment about tomatoes. Your heirloom tomatoes usually have enough acid in them to water bath, the hybrids do not. The acid was bred out to prevent upset tummies. So you can add a little lemon juice to each jar when canning to make them more acid, or just pressure can them. A really good book to help with canning is the Jackie Clay Growing and Canning your Own Food. She even explains how to grow what you are canning and puts in meals in jars, sloppy joe, spaghetti sauce etc. Her Boston Baked Beans is divine. Report

This is good info and when my children were living at home it was something I did regularly. Now that it's just DH and me, it's not worth canning a lot of fruits and veggies for only 2 people. Report

Thank you for sharing, I remember a time I would start canning in June & wouldn't stop until late October! Which would consist of 400 sT a of food! It was sure tasty too! Report
