These are some good ideas. Another way to save time is prep for two meals at once while cooking. For instance, chop carrots, celery & onion then start a soup with half & add a chicken plus any other vegetables like parsnip. Use the rest of the trilogy alongside potatoes with a nice chuck in a roasting pan.
I often cook chili & spaghetti sauce or sloppy joes at the same time. Think of alternates like 1/2 recipe of marinara sauce over eggplant w/ provolone cheese for parmesan; the rest of the sauce add meat over spaghetti squash; or try layering pasta w/ ricotta or farmers cheese then topping w/ hot marinara.
Have grilled Italian sausage, split & place on rolls w/ sauteed peppers & onions topped w/ sauce. While slicing cut extra for fajitas.
I find that changing the base matters. English muffins for eggs Benedict or tuna cheesies. Tortillas for fajitas or tacos or burritos or wraps. Crackers for snacks or to accompany soup & chili. Rolls vs bread for slider sandwiches.
Baked potatoes as a side like for poached trout or broiled salmon plus green beans or brussel sprouts but also good for entrees like w/ chili on top, or broccoli & cheese.
So many ideas, just start brainstorming or Google what items you have on hand or you & your family like. You can't prep a salad w/ lettuce too far in advance but many other vegetables are suitable.
Try prepping main meals on weekends, & cooking simpler dishes one weeknite.
Don't forget dessert! Baked apples hold well as do cooked fruit sauces like rhubarb which can be served over meringues or angel food cake slices. Consider faux ice cream made w/ frozen bananas & other frozen fruits. I use a Dessert Bullet; Yonanas is another brand & there are other methods out there.
