    Lucky you Jane - - you live on an island paradise.
    I bet you have access to a lot of delicious tropical fruits, right? We have cousins that live in Hawaii and they're always telling us about the great fruit that grows practically wild in their backyard. Yummy!

    How are you doing with the new computer? Hopefully it's working out real good for you. Mine is starting to show serious signs of "aging" and who knows when it will crash. We have gotten so dependent on our electronic luxuries . . . but then again, how fantastic to be able to communicate with you half-way across the world!

    I hope your SparkPeople program is going well for you. I'm 55 yrs old and have around 140 pounds to loose - - - and because of health issues I can't exercise like many other SparkPeople. But the program is so good & flexible that I'm starting to loose some weight anyway.

    Hi Jane,

    How are things going with you? I have been so busy trying to catch up on my Sparkpeople now that I have a computer again!

    Did I tell you that the other one was in the shop for 2 months and they finally called me to tell me that they couldn't repair it because the repairs were too extensive? I had talked with them a few times within that time period and they were working on it but it was a mess! They finally gave up and offered me a rebuilt computer for 150. dollars! I didn't have the money, but my son paid for it and said Merry Christmas late!

    I and Clinton are on a vegan diet right now. We went on this food plan because of the "Dr Neal D Barnhard's Program for Reversing Diabetes" book that I read after having read his book "Fight Pain with Food". He explains the whys and hows at a cellular level in lay terms that even I could understand. I never dreamed that I or Clinton would be happy with a vegan diet, but it is surprising how satisfying it is. Not only that...but both Clintons and my blood sugars are now normal! Woohoo!

    emoticon Here’s something to think about:

    Beans are good diet food. They have no cholesterol and almost no fat. They are loaded with protein, calcium, and iron. They have soluble fiber, which many people associate only with oat bran, and they have traces of omega-3 fatty acids, which we tend to think of in fish oils. And, they are filling! And...they are filling!

    An easy way to cook beans is to sort them, rinse them and put them into a pan to soak either over night or pour boiling water over them and let them sit for an hour or two.

    Just before you are ready to cook the beans, sauté up some onion, garlic and peppers (you can never have too much of any of those ingredients regardless of how much beans you are cooking).
    Then, pour off the soaking water and put the beans into a roasting pan that has a lid. Add the cooked onion mixture and cover with new water or broth to about an inch or two over the top of the beans (and ham hocks if you are so inclined) put the lid on and pop them in the oven on 350 degrees F or 177 degrees C for 4 to 6 hours. If they get done before you are ready, no problem, just turn the oven down to its lowest setting (or about 180 to 200 degrees F, 82 to 93 C and leave them in there to stay hot until you are ready for them. Salt to taste just before serving. Serve with cornbread…mmmmmm! Oh yeah…if you find beans are gassy…be sure to take something like BeanO ‘before’ you eat them.

    To keep from having adverse effects from consuming legumes, incorporate them into your regular diet at least 3 to 4 times a week and your system will adjust. You can eat beans at any meal of the day…
    Divide the pan of beans into 4 parts. For one part add a bit of liquid smoke and some molasses and you will have ‘baked beans’. Put one part into a skillet and continue to cook until mushy for ‘refried beans’. Save one part for minestrone or bean soup and consume the last part with the cornbread.

    Hi Jane,

    I just wanted to stop by your page and let you know that I was thinking of you!

    I haven’t had my computer now since November 4th and this morning they told me there was nothing they could do to it, it was too far gone and they had spent hours on it trying to repair the endless problems that it had. I wasn’t surprised. I told them that it had major issues when I took it in. So, they are going to give me a brand new rebuilt computer for $150.00; how cool is that?!! So I guess it was a blessing in disguise! I will be so happy to have my own computer again…I just can’t express. I mean, I’m grateful that my son lets me use his computer when he’s not using it…but I can’t wait for tomorrow…my son will get my pc for me and by Saturday morning…I should be grinning ear to ear! Woohoo!

    I know the weather has been extreme throughout the world this winter, but I hope that you are able to stay warm and dry!

    Here’s my thought for this time:
