Good Morning. I am new to the Spark Community and am very excited to be here! I have struggled with weight my whole life and have attempted all the new diets and failed miserably. So instead I am going to try on the "slow change my lifestyle". I am two weeks in and am feeling pretty good. It takes 66 days to change or build a habit, right?!?
I have read a handful of y'alls blogs and find you guys very inspiring and supportive. I look forward to being a member of this community :)Happy Valentine's Day. Hope y'all have a day full of love and kindness!Did my Fitbit just passive aggressively swear at me?? 🤣😂I really really need to learn this... I do soooo good throughout the week and lose my flipping mind on the weekends. I don't totally over do it, but I am not being careful either.
However, I did learn that dancing with my best girlfriend is a rock star cardio workout :)So I did a thing! I have always, ALWAYS discarded broccoli stems. I have a friend who swears by them and says they are tastier than the head. So the other day when my husband and I were making stir fry, I asked him to save me the stems. Well, today I diced them up and sauteed them with mushrooms and onions for my egg white scramble. Holy Moly it was delicious!! I now plan on using the broccoli stems in my next endeavor when I try to make "fried rice" with cauliflower rice. My mantra for the day... especially when I did not want to do my lunch workout, but I did it!Gotta keep moving 💪Breakfast! One slice of potato bread with guacamole, arugula, skim milk mozzarella, fried egg, and salsa topped with cilantro. And of course a few slices of blood orange.Breakfast prep: mushrooms, sweet peppers, broccoli stems, asparagus, onions, cherry tomato, and cilantro. I will saute the veggies in a bit of olive oil and add them to scrambled egg whites with a wee bit of skim milk mozzarella. Top it it with salsa and cilantro. 👌🏾Almost the weekend! I always find it a little harder to resist temptations on the weekend, so my goal is to not give in and stay the course. :)I wish 3 day weekends were a thing. Lol Have a great Monday!Good Morning! Spring is trying like heck to get itself going here in Alaska. Still have several inches of snow, but the streets are melting and it is almost hiking weather! I am so super tired today... my husband is out on a four week hitch up in the Arctic north slope. this is the longest we have been separated and I cannot sleep. An empty bed is so weird. How do you push through the day when you're tired?This will NOT be me on Monday following this weekend. This has been my biggest struggle to overcome, last weekend I was fairly successful. Chicken meatballs, cauliflower cilantro lime rice, sweet corn pico de gallo, and guacamole. Whole plate lands at 415 calories. 💪New chicken salad recipe we tried. I made half a whole wheat pita and stuffed it with arugula and a half cup of chicken salad. Super good! 195 calories per the half cup. Happy Tuesday! 🥰The thing I am enjoying the most about clean eating, is trying new recipes and becoming creative with the regular foods you eat. Breakfast today was my healthy version of eggs Benedict. One slice of Dave's Killer bread, 1/4 initial crab, arugula marinated in lemon juice, Greek yogurt herb dressing, one poached egg, and topped with green onion. Banking in at 215 calories 💪😁
Happy Wednesday!Lunch! Seared Tilapia topped with Greek yogurt herb dressing and a sweet corn pico de gallo, and a super green salad with tomatoes, sweet peppers, and carrots also with the Greek yogurt herb dressing. Banking in at 321 calories. 👌🏾Lunch! Faux Pho lol
4.5 ounces Zucchini noodles, 4.5 ounces chicken breast, 2.5 ounces bean sprouts, tablespoon cilantro, tablespoon thai basil, tablespoon green onions, 2 cups chicken bone broth, squeeze fresh lime juice, and teaspoon soy sauce. Banking in at 287 calories!
Happy Thursday! 💪😁Dinner: medium baked potato with skin and rubbed with olive oil, vegetable garden four bean 99% fat free chili, and one tablespoon sour cream. Banking in at 320 calories. 🥰I tried my hand at strength training yesterday and my muscles are SCREAMING at me today. Success??? lol Lunch:
Shrimp and bean sprout stir fry with mushrooms, onions, and topped with cilantro. Banking in at 323 calories.
It's amazing how low calorie shrimp is! It was lower than the sprouts 🤔So, last Saturday I ordered my kids a pizza. they wanted a break from my healthy cooking. Fair enough, I order the pizza and it gets here. I totally have it in my calorie budget for the thin crust Hawaiian. My Fave! Well I eat my slice and it instantly upsets my tummy. I have been clean eating for so long my body did not know how to handle the grease. Even though I was miserable for an evening, I still call that a win! My pizza craving has now been diminished :)Whelp, it finally happened... my bad knee came out to play. I need to figure out some cardio that is knee friendly for the day. I DO NOT want to break my streak. Any and all advise is welcome!

Curry chicken, citrus cauliflower rice hash, and thai lettuce wraps. Accompanied by a glass of sparkling moscato!Starting this Wednesday, this trend will end!Just completed my 60th work hour for this week. Only 11 more work hours to go before the weekend. I can almost see it!Paragliding is one of the many fun things to do in my small little town in beautiful Alaska! Not the best pic, but the coolest apart about it is that this picture is taken right out in front my local Fred Meyers. The top of that mountain is a 15 minute drive from where I was standing and maybe another 30 minute hike. So I celebrated it with a nice one hour walk around my cute little town. Very tasty and super healthy... aside from the bread and sausage lol. Was able to enjoy both tonight as I was super smart with my earlier meals. First one I've done and boy is my double chin shrinking!Had great numbers yesterday!A nice walk through the neighborhood after a rain and wind storm. The sun started to peak through.Took a great walk with the kiddos through the woods and popped out by the inlet.Crushing the weekend warrior challenge!My husband has been working out of town for weeks. I came home from my lunch workout to this! He came home a week early and surprised me.Whew that was a tough win!Saw this stop sign on a walk with my boys today. Saw it as a figurative as well as literal "sign" and kept going. It earned me my newest Fitbit badge!Beautiful day for a lunchtime walk!Took my usual walk during lunch today and had an extra pep in my step. Shaved off 4 minutes! Rewarding myself with a yummy lunch consisting of thai chicken lettuce wraps and a salad full of colorful veggies and mandarins.Had a great dinner followed with a nice evening bike ride. Even got hubby to ride with me!!!!Lunch! Spinach salad loaded with veggies and topped with a homemade Italian dressing. Accompanied by Turkey meatballs and tomato garlic herb cauliflower rice. Yum!Not too bad of a day!A pretty good day!Hubby made ratatouille! Beautiful dish loaded with veggies. First time trying it and it was amazing! Even the kids liked it 🥰Ha! Found a cute hat to wear for the Fourth of July parade today. 91° is so hit for us in Alaska, I knew I was going to need shade. Best decision ever! Holds my keys and phone perfectly!Took a nice hike in King River. It was a gorgeous day!Found the cutest and appropriate sticker for my water bottle!Dinner! Chicken tacos with refried beans and spanish rice. Only 500 for the whole meal.#BeforeAndAfter 4 years difference and 85 lbs dropped. My 2015 picture really opened my eyes!!Please pray for Alaska. Half of the state is on fire. Folks are being evacuated from their homes and some have lost everything! #walkingismyhappyplaceNot too shabby of a deficit4.5 lbs away from losing 100 lbs! Something I am very proud of!!Chasing the fall colors! This was taken on the Seward Highway in Alaska during mine and my hubbies road trip over the weekend!I love this time if the evening when the sun sets and the trees look like they're on fire.But I like working out 🤔From a size 24 to a 14! 100 + lbs lost in a little over a year. Pants are lined up by their zippers.
