Breakfast was never this yummy when I was eating bad for me stuff! Why did I ever slip away from eating this way?Eating healthy makes for pretty plates of food! Pan seared tilapia and California mix veggies with garlic and paprika.I love springtime! Finally got to go for a nice walk on my lunch today and planning on a bike ride tomorrow. I love the smell of flowers in the air.Delicious and healthy new way to have French toast! I may never go back!I am so excited by the new foods I've been trying this week. For lunch I had sautéed peppers, onions, and mushrooms over a bed of couscous with a spinach feta chicken sausage, along with aglad of almond milk. Delicious, filling and only calories.Yummy colorful lunch!Maple glazed salmon with asparagus on a bed of couscous.Was going to go for a harder, longer bike ride today but decided that spending time with the kiddo (and encouraging him to do healthy activities) was more important so we went together on a shorter, less intense ride. Only burned about half the calories. Totally worth it!Morning springtime bike ride in Minnesota. Delicious and under 250 calories! I'm for a small great to end the evening.Down 10 pounds exactly! Irrationally, I've got my amazing little man with my on a 25 mile bike ride. Going slow, enjoying the scenery and loving spending time with my youngest! Is from the trip to come later.Picnic lunch with my little man on our Mother's Day bike ride. Ended up being 28 miles total. Little man had a bit of a meltdown at about mile 17 (he's on the autism spectrum and these are common when he feels overwhelmed) but managed to pull himself together and mace it through the last 11 miles. So proud of him. Here's to modeling healthy activities and persistence.Feeling good this morning. Down to 177.4 today from 189.2 less than 3 weeks ago and I think I might be seeing some change in the before and during photos already. Before is on the left, during is on the right.Lunch today. Salad with chicken, light feta, almonds, light ranch, and blackberries.Dinner at work this evening. Whole what pasta with veggies and shrimp and a refugee fat cream cheese and parmesan topping. #eatinghealthyonthegoTortilla with refried beans, sautéed peppers, onions, and mushrooms, half of an ounce of shredded cheese and one delicious farm fresh egg. Add in a glass of almond milk and I'm set for the morning for under 300 calories.Colorful, healthy lunch. Salmon, asparagus sautéed with light butter and parmesan, and blueberries. Also got about two hours of deep cleaning done. Now off to the home improvement store for kitchen remodel supplies and the grocery store for self remodel supplies.I love when you work out after breakfast and before lunch and suddenly you've got your full day of calories available again! Yummy sweet potato hah for breakfast and a beautiful quick bike ride today now that the sun is out finally.So my weight loss slowed down for a while (seemingly none for about a week) but today I am down a total of 13 pounds exactly since May 1. More importantly, I have definitely been losing inches. Feeling motivated to keep going today. Now to just keep it up.Finished my day with a yummy combo of ground turkey, chipotle pepper, bell peppers, brown rice and avocado with a side of seasoned black beans.
Under 500 calories, super filling and really tasty.Down to 175 even this morning and my birthstone ring that hubby got me last Christmas finally fits!Okay, I had a couple of off days. Didn't track my food well and didn't get much exercise. No weight lost but no weight gained. Today I decided to buck up and really focus on pushing myself again. I started the day with a 20 mile bike ride (at about a mile per hour faster than last time) and then got healthy groceries for the week. Now I'm planning on mowing the lawn once it cools down just a bit. Making healthy choices and logging everything. Back on track and loving it!Got a great bike ride in this morning. Added another 2 miles to my ride (22 total today) and added a bit to my MPH too (13.1 now after starting out smooth ago at just barely 12). I also managed to go 12.5 miles before stopping for a quick break (was stopping every 4 miles at first) and that break was mostly just because this spot just felt like it deserved a little mindfulness. The scale hasn't gone anywhere in the last week but gotta love those #NSV's !!!Yummy salad for a late lunch today. Leaf lettuce fresh from the Farmers' Market with apple, chicken, and pecans dressed with spicy peanut sauce sweetened with a tiny bit of maple syrup. Delicious and about 350 calories!Didn't get a chance to get a bike ride in but burned a few calories raking up branches and then brought my son to visit a friend of mine at her farm to see her pigs. She's had a hard go of things recently so it was nice to visit for a bit and give her a hug. Remember to hug the ones you love. 👪Strawberry spinach salad with pork and a light balsamic vinaigrette for lunch. Yummy and colourful.I planned ahead today, got a good workout in ahead of time and then truly and mindfully enjoyed a delicious chocolate pomegranate cupcake with my son (logged it in Spark, of course). He has a therapy appointment every other Thursday morning and every other time he goes we stop at a local bakery and have a cupcake. This is a routine that is important to him and planning ahead means I can continue to enjoy it with him. Being properly mindful also means that I can enjoy it more myself.Busted my record for a bike ride this year. Almost 36 miles in 2 hours and 48 minutes. Almost 1800 calories burned! I could barely lift the bike back onto the carrier when I got done and my legs only want to move in circular motion but I did it! 💪Made it 42.8 miles on my bike ride this morning! I want even sore until about 27 miles in. By 32 miles my thighs were burning. The last five or so miles were spent yelling at myself, swearing, and convincing myself that I wasn't ACTUALLY going to die! 😰😰😰 But, I made it! Some Advil and a hot bath later and I can even walk again! 😁😁
My goal is to be able to do the whole trail out and back- 80 miles total. I'm past the half way point.I hadn't been out on my bike hardly at all this week. Between taking asoftball to the face on Saturday (hand eye coordination is not my thing 😉) and being sleep deprived along with my son for his EEG on Wednesday, I just hadn't felt like doing much. Decided to suck it up and get moving this morning. Got in 9 miles and it felt good! Plus, you gotta love when the scenery makes it all worthwhile.I made it over 50 miles today!I haven't been on my bike hardly at all for almost two weeks but today I got out and did a metric century- 100 km (62 miles although I ended up doing 64 because I forgot to start my GPS at first). A new personal record!Finally made it over a huge plateau this week. Had been sitting at about the same weight for at least a month. As of today, I am down a total of 32 pounds! Have patience and keep working on being healthy, the rest will take care of itself.Yummy omelette with mushrooms, onions, and chicken andouille sausage. Down six pound even since New Year's Day.
