Stuffed Quahog

15 medium-large quahogs steamed open saving water -- steamed and chopped
1 package Pepperidge Farm stuffing
1 teaspoon cilantro
1 pinch red hot pepper
1/2 small onion -- chopped
1 stem celery -- chopped
1 teaspoon cumin
2 tablespoons olive oil
3 tablespoons hunts sauce or ketchup is fine
1 teaspoon hot paprika
1 pinch salt and pepper

Scrub quahogs rinsing well. Put in pan with hot water just covering. Put cover on pan. Heat until opened and foam comes to top of pan Watch so it doesn't over flow.
Let cool a bit then shuck into bowl and cut up removing black portion.
Chop celery and onions small and then fry in oil. Add clam juice from pan taking it carefully from top juice eliminating any sand.
Add stuffing and clams and mix well with a little salt and pepper. Break apart quahog shell for two halfs over sick.
Stuff each and then when all stuffed sprinkle lightly hot paprika or regular paprika
Bake at 350F for about 25-30 minutes.

You might want to add a little ground cooked sausage or lingquisa! But it isn't nessesary.
