SUNDAY BLOG HEALTHY RECIPE

Spicy Crisp Chicken

6 boneless chicken breasts (cut in small pieces)
1 egg, beaten (or 1/2 c buttermilk (I prefer buttermilk)
Combine:
1/2 c Parmesan cheese
1/2 c cornflake crumbs
1/4 c ground red pepper (cayenne)

Preheat oven to 400*. Dip chicken in egg or buttermilk, coat with combined mixture.
Bake 15 to 20 min., turn bake 15 min or until tender.

note: I think the buttermilk tenderizes the chicken because it is really tender. emoticon
