The Bountiful Foods of Summer !

To look out the window at the overcast sky and feel the cool air coming through the open window I would think it's an October fall morning. Then I realize fall is just around the corner.
Fall is my favorite time of all the seasons. I love to see the leaves change color. The crisp morning, giving way to warm afternoons. I love fall colors, rusts, reds, yellows,with some green still showing. Mother Nature is quite an artist with her color palette.
Even the foods get in on the fall season. The last of the tomatoes , and picking the green ones to ripen on the window sill before the first frost. The root vegetables are coming into their own. And of course the pumpkin, in its glorious orange shade.
We start to think of warmer, heavier foods in fall weather. Stews, might replace the summer barbecue. The slow cooker will come out of the cupboard. A big bowl of soup might feel better than the light summer salad. Hot cocoa instead of ice tea.
I love the fall and winter foods , but at the same time the possibility to consume too many calories, is ever present.
Am I ready for Fall?
No, not yet. I want to experience more of the beautiful summer. The summer bounty of fresh just picked vegetables and fruit. More sun to prepare for the shorter cooler falls days. More summer to hold off the wet winter weather that will follow the lovely fall season..
I went to my favorite veggie/fruit stand yesterday. I bought the most beautiful large beefsteak tomatoes, gorgeous ripe ,ruby red and the taste was ,warm, sweet, fresh, like a tomato should taste. It put the supermarket tomatoes to shame.
I also got lovely peaches, just picked. Fresh purple plums, ever so juicy. And the corn, picked right from the field, next to the stand. It still has the corn smell, could feel the sun, that has ripped its sweetness just perfect.
I bought a big bag of corn for the dinner tonight at my daughter's. I'm cooking. Going to roast it on the grill. Along with a a big lime marinated steak, fresh tomatoes and a almond joy coconut pie.
Corn can be stored up to two days,but it starts to loose its sugary sweetness as soon as it picked. So you can imagine the corn in the supermarkets, how long it has been around.
So last night I was going over my menu and thinking about my foods, and I thought wait a minute where is the corn? I got out of bed and looked in the kitchen, no bag of corn, went out to the car, no corn. I must have left the bag of corn in the cart when I put other things in the car. How that happened I still don't know.
Now do I drive 20 miles, use a gallon of gas to get fresh picked corn or go to the supermarket, 1/2 mile away for old corn.
I drive cross town and get my fresh sweet corn. Maybe I'll see something else I just have to have. Smile!! There is not comparison. It's fresh or nothing, as long as I have a choice..
Last night was looking forward to having a tomato sandwich for diner. I didn't stop at the market for more of the artisan country rustic bread , I had three or so pieces left. But upon looking at them found they had molded , and had to substitute the slim sandwich rounds, I had my freezer.
Since I only eat bread once a week or so, the freezer keeps it from going bad.
To say my freezer is over crowded is an understatement.. I have to remove half the items to find what I need.
So anyway I toasted the bread rounds, spread some low fat olive oil mayo on, cut 1/3 inch tomatoes slices, fresh cracked pepper, a pinch sea salt and those two open face tomato sandwiches were so delicious.
I finished eating, went on line for awhile and got ready for bed. I had to fill up my water bottle, so I went into the kitchen before 9:00, which is my cut off time for trips to the kitchen.
Lo and behold sitting on the counter was a small cup of Skinny Cow .Dulce de Leche, an ice cream, it's 150 calories and very low fat. It had melted because I had forget to put in back in the freezer earlier when looking for the bread thins. So what if it was melted, I drank it like a milkshake. Too good for words. I am buying more of that. I logged on to SP and added it to my food tracker. Good , I always have room for the unexpected.
By now you might be wondering where is she going with this blog.?
Just that foods play such an important part in our lives Lets enjoy the bounty of foods that we have available. The fresher the better.
Each season has its foods and we have to adjust according to eat healthy and stay fit.
So I leave you with this quote from John Wooden: "I am not as good as I ought to be, I'm not as good as I want to be. I'm not as good as I'm going to be. But I'm thankful that I'm better than I used to be."

    I am a native Oregonian and grew up very close to Salem. Right now I'm in Australia and it's winter and we dont' really have defined seasons. I MISS AUTUMN IN OREGON!!!!

    I so wish I could grow tomatoes where I live, but our growing season is way too short. Which makes the summer way too short. So I'm with you - looking forward to fall, but it can wait awhile longer!

    I am definitely looking forward to fall - it's been a pretty hot summer here. A highlight will be driving up to north GA for apples.

    I love those sandwich rounds - heard about them on SP. And I don't even like tomatoes, but the way you described them made me want one.

    I love early Fall but am not that crazy about late Fall here as it is too much like Winter. Once November arrives it's cold and the arrival of December is the unofficial beginning of winter here. I like the soups and stews and the slow cooker and the cocoa.

    I loved the quote you ended with . . . had never heard it before, but it could become my mantra!
    I enjoyed a tomato sandwich on deli-rounds yesterday - savored every bite. Sadly, I didn't say no to the pizza in the evening. I've been craving pizza and was near a Pizza Hut - so I got a medium thin crust veggie lovers, took it home, and ate all 8 slices. It put me about 600 calories over my count, but I tracked it! Best of all - I no longer want pizza!
    I'm going to make a container of my go-to "salad" this afternoon. I chop raw broccoli, carrots, cauliflower, zucchini, and onions into small bite-sized pieces (about a cup of each), pour about a half cup of a low-fat vinaigrette or low-fat Italian dressing over it, cover, and refrigerate. I actually turn the container over whenever I open the fridge to keep the the dressing from settling. i'll have 2 cups of that with a veggie burger (no bread) and applesauce for dinner tonight.
