Acorn Squash on a Chilly Night

Don't know what happened but it's chilly here north of Houston. Got down to 40 last night. DH and I are loving the temperatures...leaving the windows open all night. Jolie isn't as fond of the cooler air (she has started sleeping under the bed).

I baked an acorn squash tonight. Why do the only recipes for acorn squash (that I can find) call for butter and brown sugar? Still pretty good. DH won't try it so I get to take the other half for lunch tomorrow.

Most of the winter squash recipes call for brown sugar. Anybody got any recipes without sugar? emoticon

    We do butternut squash all the time. I use the brown sugar splenda. 1/2 packed teasp is only 20 calories and goes a long way.

    I cut mine up into chunks and spray with olive oil , sprinkle with cinnamon and bake. Lo cal and tastes good.

    Yes I make mine with olive oil, pine nuts, garlic and salt and pepper. It is real good too. emoticon
