Stop and Smell the Roses.

So here I am on the beautiful Sunday reflecting on what I have to be thankful for.
With all the natural disasters affecting people around the world. The unnecessary man made wars, taking the lives of innocent people. The hunger and sickness that prevails in so many countries. Even here in this rich countries of ours. There are families , children going hungry. Families are homeless. Capable men and women are out of work , unable to provide for their families. So when I think of my difficulties, they are small in comparison to what many others have to contend with.
I have wonderful friends. A very supportive family that's always there to pitch in .
I have a comfortable apartment ., . An abundance of food to eat. I have also master the control of eating that abundance of food in a responsible manner. making the right food choices.
I can travel where and when I want to. I don't live in fear of an attack or bombing.
I don't live in fear of what tomorrow will bring. Or where I will be living.
So many times we take what we have or how we live for granted. We should like they say "Stop and smell the roses". Take time to appreciate what we do have, not wishing we had more.
Even if we are experiencing some hardship, due to rising food prices or gas prices. Maybe we are not going to get a raise this year. Look at what you have to be thankful for. There are always those who are worse off than you are.
I like to take Sunday to reflect on what the week has been to me and what the coming week will bring.
There are some who feel that Sunday is the end of the week. Others feel that Sunday is the beginning of the new week. If you look at the calendar is shows Sunday at the first day of a new week. So whether is is the last day or first day of the week, it's a good day to stop and be thankful for what you have.
I am especially thankful today for a lovely friend, Jim, BF who is super nice to me.
Friday Jim came over vacuumed the apartment. Something I was having a hard time doing with the bum knee. He then took the dogs for a walk. Of course that is a sight to see. A big golden retriever, Buddy, and a little Yorkshire Terrier, Titan. . Mutt and Jeff, Smile.!!!
He was gone for quite a while. When he came back he had a bag from Applebee's with our dinner. I asked him," Did you walk all that way." Which is about 1 1/2 miles. He said " , No, I probably could have with Buddy, but didn't think Titan could manage with his little short legs."
"Hay , don't put my baby Titan down , he gets around pretty good on those little short legs." But I did think it might have tired him out, a 3 mile walk.
I had invited some of out friends over for dinner for Saturday night.. For on Friday when I wanted to go out , everyone was busy and I could find no one to play with, so I thought I will have them come to me.
When I told Jim , he said let me take charge. He's a excellent cook. So of course I said yes.
He told me all I had to do was sit back and look fabulous. He's such a sweetie. I told him that was something I could handle. Smile!!
I did plan on making a low calorie Italian Tiramisu. I will post the recipe, it's very good and only 100 calories per 1/2 cup. And most of all it tastes like a super rich one..
Jim planned on grilling fish, Mahi Mahi, with a citrus salsa. Lime coconut rice and grilled asparagus..
When he came back from the fish market he had ex large shrimp, He said the mahi mahi and other firm white fish didn't look good to him, so he switched his menu .
He served Gnocchi with Shrimp , Asparagus and Pesto . It was fantastic. We counted the calories, came in at 355 per serving. Fat 9 gr. Carbs, 42gr, Protein 27 gr. Sodium 747 mg. All very acceptable .
He also served a mixed baby green salad with lemon, olive oil dressing , a crisp white wine, some Italian rolls and of course the tiramisu. It was a very nice meal.
We all watched a movie, and played some games and made it a nice evening.
Jim has given up wine for Lent. But you can indulge on Sunday. So last night we decided that we were in Rome eating. That way it was already Sunday. I know he cheated.
He got up this morning fixed my smoothie for me, and took the dogs out for a walk. I fixed him french toast for breakfast. And even ate a piece too. He left to go to mass. He said he will confess his breaking his fast and pay his penitence . The he said he will go home and open a bottle of his favorite wine and enjoy it. His son and family is coming over for Sunday dinner.
I am staying home to rest my knee.
I went to the gym yesterday and had a terrific time in the water.
I am a fire sign, a Sagittarius , which doesn't mix with water. But for me it's calming and soothing . I love to live by water and can spend hours in the water.
I have enjoyed my relationship with men of the water sign too.
If I am with another fire sign, we burn each other out. There is no one to calm us or keep us in check. I am drawn to that bad boy, kind of man. But through the years I have learned that when I fly to close to the flame I get burned. So it's time for me to put some of my wild ways behind me and look for calmer waters. In my present BF, he's a Pisces . Compassionate , warm, self sufficient , not at all needy. We complement each other very well.
I had got so tired in the past with my family and friends trying to put me with a man. Always saying I NEEDED a man in my life. I hate that. No one NEEDS another person in their life.
It's nice to have a loved one or friend ., but don't say need. That's like saying you are not complete unless you have a mate. So out dated. People can have full, happy live on there own. You want someone to ENRICH your life not because of NEED .
You know I could go on about that subject but I will save it for another time.
I am going to fix rice balls, an Italian treat with the left over rice from last night. I listed them in my tracker and I can have 4 balls. You stuff the balls with cheese, meat or fish. I have a little piece of cod left over from yesterday so nothing goes to waste .
Of course I will have a little tiramisu that's left over too.
After I figured in my food for today I had 1075 calories listed. That's a little much for me. But it's still under my 1100 calories. And it is Sunday. we always had a bigger meal on Sunday.
It was our after Sunday church afternoon meal. Later in the evening we would have a light supper. Those were the days of living on the farm, My good memories of my life and remembering my Grandparents. My life is made up of chapters like a book.
This chapter that I am in right now is one of the most complex and interesting. Plus I have no idea when this chapter will end and a when a new one will start.
But I will end this blog.
Please take time to be thankful. And smell the roses.
Take time if you can to reach out and help some others who are needy.
Live for the day. Look out for tomorrow, but remember it is not promised.
Today will become yesterday and tomorrow will become today. or at least that's the plan.

    Your terrific blog reminds me that I used to have an evening practice that did much for my attitude, in a quiet way -- I kept a pretty little notebook on the night table, and every night would write down/draw three things about that day for which I was grateful! Could be as brief or detailed as I felt like. This quick trick always settled me into a contented, peaceful mood for sleep.

    Hmmm -- good idea to return to that for a while!

    Love to read about your life--you write so well! I'm curious about your calorie intake, I too, eat less than everyone says you should eat, and yet the doctor endorses it, I do take a multiple vitamin, a vitamin D, and a fish oil capsule to take care of any nutrients I'm not getting. I try to get out and walk 4-5 times a week to keep burning calories, because I admit it, I tend to SIT around way too much. I'm flirting around with these last 5 pounds now before I get to my goal of 160, and I can imagine it's going to take quite a while to lose them. I always said that would be okay, because I knew this is my new lifestyle anyway, so if the pounds come off slowly it doesn't matter. But I was impatient, and it did matter--I was playing a game of numbers with my scale--and that's a dumb game. I read about someone in my new Weight Watcher magazine (I'm not on the WW program, but the magazine is interesting and motivational, so I buy it), who lost most of her weight in the first year, like 100 lbs. Then it took her 9 months to lose her last 27 pounds. That's 3 pounds per month. But if you lose it that slowly, during those 9 months, you are basically learning how to maintain too. There's nothing wrong with that. I need to learn to be patient, and to once and for all come to the realization that this is how I eat now. I don't go to a restaurant and order anything I want off the menu. I don't eat ice cream and cookies, cake and potato chips to my heart's content. I practice portion control, eat lots of fish and veggies and fruit and lean beef, and log in my food every single day. There is no other way to be accountable. I constantly have to be vigilant, and will for the rest of my life. But it's worth it.

    I am so grateful for everything I have including living in this Country for all the reasons you stated in your blog. I feel for the sick and homeless also as we are lucky to have a safe place to rest and relax. . .

    You are an amazing woman and wise woman always inspiring me and many others with your wisdom and foresight.

    Jim in definitely a keeper and I'm also a pisces and it is a good sign to be born under. Your dinner on Sunday made my mouth water as I'm sure not a gourmet cook. Please do post that Tiramsu dessert when you have the time--as it's one of my favorites!
