Meatloaf Report

I made meatloaf from ground chicken and a few of you said you were interested in how it turned out for us. Well, it wasn't bad, but not something I think I will be hurrying to make again. It was not dry, just the opposite, it was seasoned fine, but something about it just wasn't right. I think maybe the texture was too dense. Hubby actually liked it. My eldest son refused to try it, and when youngest son ate it, he said, "It will make a turd." That is his way of saying it was okay, but not something he'd be wanting to eat, again.
I think a pineapple glaze on top might have helped, but if I'm going to do all that, I'd just rather have regular chicken. It might be good in white chili, and that would probably be the only way I'd try to use it, again.

    I like ground chicken or ground turkey for somethings but I have to have beef in my meatloaf. I like to mix 90% ground beef with ground venison which is very low in fat. My family likes spicy so we put jalepenos in it and salsa on top. Yummy!

    TVP or textured vegetable protein actually tastes great in meatloaf, chile and spaghetti sauce. I would not have believed it but a friend made a big pot of chile and we are raved about it and that is what she used. Now she has us all trying it in different recipes. No fat and no grease and great texture. It seems to be available in lots of stores.

    I like ground turkey and it's great with spinach in a meatloaf, but I am not a fan of ground chicken either- it's the texture thing for sure.

    Maybe use ground turkey next time to see if that works better for you- it's really good with ketchup and barbecue sauce type meatloaf taste.

    I have to say, I LOVE Ed's saying. In fact, I've taken to using it when appropriate!

    Ground chicken in white chili sounds pretty may just have to make that & report.

    I often combine chicken or ground turkey with a lean ground beef and seem to get better results. Our favorite meatloaf this way is a mexican meat loaf where I use my own mexican seasonings to season the loaf. I bet if you try this the next time and don't tell anyone, they will not know the difference.

    I have made meatloaf with ground turkey and with a tomato sauce topping I like it just as well as the ground beef. I use it for Chilli also and DH and I, I guess, have just gotten used to it. Love trying some of the recipes from SP and have several I use now. emoticon

    Thanks for posting - Good to know. I have tired this once or twice myself, and no matter what you put in it, it doesn't have the same comforting quality as good 'ole meatloaf. I have started making my meatloaf with 90% lean ground beef and that works well. Almost same amount of fat as in ground chicken or turkey, but the flavor and texture are there. Made some chili last night with 96% lean ground beef. Tasted great!
