I made meatloaf from ground chicken and a few of you said you were interested in how it turned out for us. Well, it wasn't bad, but not something I think I will be hurrying to make again. It was not dry, just the opposite, it was seasoned fine, but something about it just wasn't right. I think maybe the texture was too dense. Hubby actually liked it. My eldest son refused to try it, and when youngest son ate it, he said, "It will make a turd." That is his way of saying it was okay, but not something he'd be wanting to eat, again.
I think a pineapple glaze on top might have helped, but if I'm going to do all that, I'd just rather have regular chicken. It might be good in white chili, and that would probably be the only way I'd try to use it, again.
