I wanted to share with you a yummy meal idea I made last week for dinner. I made "Zucchini Grinders" with parsnip fries and roasted onions on the side.
To make the zucchini Grinders, I chopped the zucchini into cubes and sautéed them with sliced mushrooms and onion slices. I heated up 1/2 cup of spaghetti sauce in the microwave. I used regular hot dog buns for the bread but the original recipe called for french rolls, but I was to chincy with my calories for the high calorie french rolls so that's why I opted for the 110 calorie hot dog bun BUT beware, the hot dog buns will be a bit soggy (but still yummy)! I toasted the hot dog buns in the oven so they would hold up better, then I spooned the zucchini mixture on to the buns along with the spaghetti sauce. I topped it with a 1/4 cup mozzeralla cheese and popped them in the oven for a few minutes to melt the cheese.
It may sound like a lot of work but there will be enough for the whole family or for several meals if single.
I borrowed the parsnip fries recipe from GOALOFLOSING and they were delicious!! I highly recommend trying these if you never have. So good!
To make the roasted onions, I just quartered the onion, tossed the quarters in some olive oil and seasoned. No one would ever miss onion rings if these were available (in my opinion). They were melt in your mouth good!

As you know, I think it is difficult to make food look good in pictures so my apologies if this kind of looks gross. By the time I get done cooking, I just want to hurry up and take the picture so I can eat!
