Black Bean burgers with lime cream sauce

Ok tonight I am doing the Black bean burger's with the lime cream sauce. I am not going to use fresh cilantro & I am going to use why chess I have at home. I am not usre if I am going to use the lettuce. I will post how it was later tonight emoticon

    Black Bean Burgers with Lime Cream



    Ingredients


    1⁄4 cup fat-free Greek yogurt
    1 lime, juiced and zested
    Two 15.5-ounce cans black beans,
    drained and rinsed
    1⁄4 cup whole-wheat breadcrumbs
    2 tbsp chopped cilantro
    1 tbsp diced jalapeño pepper
    1⁄2 cup grated carrot
    2 egg whites, beaten
    1 tbsp Taco Seasoning
    1⁄2 cup shredded reduced-fat Monterey
    Jack or pepper Jack cheese
    4 whole-wheat sandwich thins or
    Multigrain Rolls
    2 cups shredded Romaine lettuce
    1 large tomato, sliced

    1. Combine the yogurt, lime juice, and zest in a
    small bowl; stir and set aside.
    2. In a large mixing bowl, mash the beans slightly
    with a fork or potato masher. Add the breadcrumbs,
    cilantro, jalapeño, carrot, egg whites,
    and Taco Seasoning and combine. Divide into
    8 patties. Place the bean mixture in the palm of
    your hand, place 2 tablespoons of cheese into
    the center, then fold over into a patty.
    3. Preheat a flat nonstick skillet over moderate
    heat. Once warm, add the burgers and cook 3
    minutes per side. You can also cook the burgers
    on a baking sheet in a 350° F oven for 20
    minutes.
    4. Serve on a sandwich thin with lettuce and
    tomato, then divide the lime cream among the
    sandwiches or serve on the side.
