Living on SCD - Lasagna night!
Monday, July 09, 2012
My husband is still having much success with his SCD diet (pain control for UC) and because he eats SCD, our meals at home have been adapted accordingly.
I'm particularly proud of last night's dinner...
I purchased a lasagna pan through Avon that has three separate rows. This is perfect for my family because I can separate out Adam's food from the kid's. (Our kids still eat grains and starches.)
For our lasagna, I made a row with whole wheat pasta for the kids and then two rows using spaghetti squash instead of pasta for Adam (and me).
I cooked the squash in the microwave and drained it so it wasn't wet. I made homemade spaghetti sauce from roma tomatoes and onions pureed in my food processor and mixed with lean ground beef, oregano basil and some garlic. My husband can't eat mozerella cheese so I used cheddar and parmasen across all three rows and topped it off with some oregano. It was DELICIOUS! Even my son enjoyed some of the squash version. Yummmmm!
I then made some fresh lemonade for my husband from the juice of two lemons, honey (dissolved in hot water first) , cold water and ice. Refreshing! (My daughter loved it but my son shies away from acidic stuff so he had a juice box.)
For some reason ridding my life of pasta and carbs seems to be easy!
Sugar now, that's another battle altogether!
