Yesterday I was blessed by the Lord to come up with a smoothie recipe that I must say I enjoyed!!
I'd imagine a similar recipe has been published somewhere but this is my version.
Yam - 56 grams (yes I still keep the food scale going)
Banana - Medium
1 Cup milk
Hand bunch of lettuce (I used leftovers from a spring mix)
Honey (to taste for sweetness)
Cinnamon (otherwise it may taste bland) - Nutmeg would probably work good too.
Mix in food processor or blender and enjoy!
Because I'm a texture eater I had to strain the smoothie but don't worry those nutrients won't go to waste. I plan to incorporate the un-strained portion into a waffle batter for some Yammy Banana waffles tomorrow morning.
Then for dinner (I'm glad I allotted room) my mom share some homemade sweet potato soufle' (sp?) I plan to have it with some chicken and mac n' cheese.
