Pumpkin.... Is it a fruit or a vegetable??

Trying to find things to cook, I bought a pumpkin and peeled and cut it up. Then I put a few thin slices on the GF grill. It was rather bland. Today, I took the rest, cut it into chunks, put it in a casserole bowl with some water, cinnamon, pumpkin pie spice, vanilla (( just dumped, didn't measure)). I had a couple older cans of "organic pumpkin" that I had gotten on sale last year and decided to add them to the mix. Pureed it all with a hand blender. Oh, and I added a little stevia. I didn't weigh and measure it today so just guessing that it's 50 calories per cup. I'll do a better time of figuring it next time. I may add some sugar free jello or pudding next time to give it more flavor and thickness. I'm just experimenting! Such fun! It's cooling and ready to be frozen for my "treat" needs in the evening. Can't beat the calories......

It is so fun to experiment with REAL foods and not that canned stuff with added things I can't pronounce, salt, and other unnecessary additives!

Wonder what would happen if I added cottage cheese to it?

having fun with REAL food is great... as this is how I WILL eat forever....

    I had a recipe for pumpkin soup one time that called for a dollup of sour cream on top before eating it. Yum!

    Sounds interesting. I do believe pumpkin is a vegetable.
    Today on Sugar Fit there are 30 ways to fix pumpkin. Just google and you can come up with many interesting ideas.
    Pumpkin can be treated like a squash.
    There are stews that cut up pumpkin works. It's used in African cooking.

    I think pumpkin is absolutely scrumptious! You might even check out the Spark recipes. There are soups, casseroles, all kinds of things to make with pumpkin that sounds good to me. I believe I even saw a 'pumpkin stew' of some sort. What you made and will freeze for treats sounds good to me.

    Hmm...my favorite way to eat pumpkin is in a pie or pumpkin bread, but since that's not on my list of foods these days, I think I'll have to pass. To be honest...it doesn't sound tempting to me at all, but I say we all need to do whatever works for us, so keep experimenting! Hugs, Jeannie

    Roasted w/ cinnamon, ginger and a little nutmeg (pumpkin pie spice) is awesome, too. If you roast apple slices with it, it's a heavenly dessert.
