I like to make a large salad ahead so I can eat more than one meal from it. This saves time making one each meal. I also make large kettles of soup at a time an freeze portions to pull out and warm up when time is short. By making my own soups, I can control what goes in such as sodium. emoticon

    Salad is good for you. You can put so much into them. Watch out for the dressing though. Dressings can mess you up in the calorie department.

    I often will make a big thing of soup in the crock pot, and load up my freezer! :) perfect for the long winter ahead of us :)
