2 quarts fresh cucumbers, sliced (unpeeled)
1 large onion, thinly sliced
2 tbsp. canning salt or kosher salt (heaping)
1 1/2 cups sugar
1/2 cup vinegar

Combine cucumbers, onion and salt. Mix and allow to sit at room temperature for 2-3 hours. Do not rinse.
Stir together sugar and vinegar until dissolved. Add to cucumbers. Transfer to airtight freezer containers and freeze for up to 3 months.
