Rutabaga, Fennel, Cranberry.... new to me today

I bought a Rutabaga, they are so hard to cut up raw... So I peeled it and plunked it in a small casserole. should have put a bit of water in the bottom. But it is now cooked and might I say, very tasty - 100 grams only 30 calories. I used to cut it up and add it to soup, but I like the taste a lot better just baked like tonight. Excited to have new things to eat!

I have never had Fennel. Took a taste and realized it's Anise and tastes like licorice. yum. and low in calories. Well I cooked up some cabbage on my GF grill and added some slices of Fennel.... very tasty and I noticed lots of recipes in Spark that use Fennel. A little pricey because only available in organic, but will add variety to my veggie selections.

Cranberries.... I love cranberry sauce, so decided to try to make my own... I put 3 bags of fresh cranberries in a casserole, added the 3 cups of water they said and then added 1.5 cups of Splenda Brown Sugar (that's half the sugar called for and what the brown sugar bag says.) With calculations, found that 1/2 cup has 160 calories. And it's delicious! and I KNOW what it contains :) Put it in my 1/2 cup containers and I'll have a treat every day for a couple of weeks!

Anyone have any "non" usual veggies they like/make? I'm like Mikey, I like anything.

    Yum. I've never tried parsnips. I'm going to have try them. I'm so happy that you got your GF out again, Lois. You do so well when you have George in your kitchen.

    Can't say I like parsnips or rutabagas but do like the turnip greens..not the turnips...I don't like radishes either..but like cranberries..they have them dried like raisins now and love them that way. I do love and eat a lot of for anything new. I'm pretty plain jane when it comes to eating..

    Parsnips are the best.. I slice them and grill them on my GF grill brushed with coconut oil... a little salt and pepper and they are wonderful. Can't say the same for turnips, however.

    Thanks for the cranberry recipe! I am partial to parsnips. My Mom use to make them with potatoes and onions. A little butter and the sweetness of the parsnips made the whole dish great. Have not had it in quite awhile, but I may be making myself hungry for it. emoticon
