Still plugging away..

I'm still here, I'm still doing my mileage challenge, I'm just mostly being quiet.

I took Sunday and Monday as days of rest due to the unusual heat we've been having here in Portland lately. It fortunately broke last night and cooled off nicely. I had planned a 3 mile run on the treadmill in the basement, and was dreading it, so instead given that it wasn't too terribly awful outside I invited Bill to go for a walk with me. We did two miles and it was very nice. He doesn't often say 'I enjoyed that' but did last evening. I'll take it!

A friend at work yesterday asked how many veggies we go through a week LOL I'm having either fruit and greek yogurt for breakfast, or veggie eggs. Then lunch is some kind of protein with .... yep, you guessed it, more veggies! Either a bag of frozen or a big bowl of fresh.

Our salads now consist of chopped veggies - broccoli, cauliflower, peppers, zucchini, carrots, asparagus, mushrooms, sugar snap peas, onions, etc. and so on, but no lettuce. We still love kale and spinach, but have foregone adding them to the salads because there are just so many veggies there's no room for leafy stuff! It's good and crunchy and satisfying. If I want something warm, I saute the veggies in coconut oil. Delish!

So that's essentially me. I'm not going to get all twitchy over not running yesterday. I'm walking kennel kids tonight and will certainly get a great workout with that. I have Thursday off (as does most of the US) and will get out early to get a run in before the day heats up. I also have Friday off, so I'm planning on getting the kids out and walked early as well. Then I'll get up early on Saturday and do another long run - 5 miles this time - and will feel ok about my week's efforts.

    Love it! Also, I kind of like the idea of liberating salads from leafy stuff! I am sooo glad it's cooled down, because that was ridiculous earlier this week! Happy Fourth to you!

    A walk with Bill works in my book! Glad you're enjoying your veggies, I go through phases where I'm eating lots and then not so much. The heat makes me want more salads, though, so that's a good thing. Enjoy your time with the kennel kids and then the days off; I'm sure looking forward to having tomorrow off, just wish I could take Friday too!

    I don't blame you sor skipping Sunday/Monday outside miles. It was just too dang hot to do anything! Glad it's cooled down a bit. BTW, my lunch was sauteed sole and 6 cups of sauteed spinach. Enjoy your long weekend!

    I did the same thing as you last night. It cooled down very nicely and my daughter and I went for a walk. It was so refreshing! Sounds like you're still doing the right things. Keep up the good work and have a nice four day weekend!

    It's wonderful to read your update. Way to go on the miles and the enjoyable walk with Bill. I think I'm often dragging hubby - he rarely complains but he also rarely says much positive unless asked. LOL!

    And sheesh - that heat. So glad the worst seems to be in the past.

    And way to go with the veggies. I have the same problem with adding the leafy stuff after all the other veggies are in the bowl. I love this kind of a problem.
