OK so I am going to skip discussing some things that I might not be too happy about and talk about some things I am (the scale only went down one pound). This week I did some cool stuff with food. We went to the big Beaver Street Farmers market in town on Saturday. They were having their 75th anniversary and a fun fall festival- so the kiddo was happy. I wanted to get some healthy choices for the week- and convince the little guy that fruits and veggies are not that bad. We found a bunch of fun stuff to try ( neither of us are big fans of venturing out or eating healthy). I got 5 pounds of apples (because we both love those with peanut butter), 5 lemons. I got four ears of sweet corn- shucked, I got 1.5 pounds of grapes, I got 4 zucchinis, 7 sweet potatoes, a little pumpkin for the kiddo to decorate, and 5 homemade whole wheat spinach pitas- and I got all of it for $19.50!!!. I also had one spaghetti squash in the fridge from a grocery trip this week. So I did some healthy cooking over the weekend. I sliced the zucchini and made zucchini chips in the dehydrator- I plan to do the same this week with the sweet potatoes and apples. I cooked the spaghetti squash in the crockpot and made an amazing chicken pad Thai with it (I did use store bought sauce but it was still very healthy). I bought some beef for the boys and made several batches of homemade jerky in the dehydrator. And I went ahead and made all my lunches and dinners for the week and portioned them out. Overall I feel like there were some really food successes this weekend (although I did have some M&M's and frozen taquitos n Sunday - opps) But it has motivated me to try new things and keep experimenting with recipes to be healthier. I made it to the gym this morning and I got my weights in but I did not have time for cardio- so I will be heading back tonight. I am getting through my Monday and so I guess that is a good thing.     Experimenting with new foods and new ways of preparation is a great way to avoid boredom I reckon.
