Who needs chickens to have satisfying soup for the soul! My vegan soup experimentation week is off to a strong start. Sweet potato, carrot zucchini soup was great. Last night's cream of celery soup with kale also a success. On to Broccoli soup tonight to use up half a head of broccoli and a somewhat wilted romanesca. My freezer is getting full of portion sized boxes of leftover for lunches. I love making soup and freezing it. No need to prepare much in the morning as I am heading to work. By lunchtime it is ready to microwave for an easy lunch, and better than the packaged frozen lunches that you see so often in work lunchrooms.
