I recently found a new produce supply. It is a "produce rescue" operation that prevents excess veggies from being wasted and brings low cost fresh vegetables to the community. I can't resist a bargain and totally abhor waste. So for the past few weeks I have been getting up to 60 pounds of produce for $10 donation. OK, now what to do with it all. Last week I came home with several eggplants. Grilled eggplant, oven roasted eggplant Parmesan and the rest were roasted for a dip. Summer squash and zucchini were grilled, baked, stir fried and finally the rest were dried for chips. Tomatoes became the sauce for the eggplant Parmesan. Now this week it was cucumbers. Pickles!
