Vegetables, vegetables!

I recently found a new produce supply. It is a "produce rescue" operation that prevents excess veggies from being wasted and brings low cost fresh vegetables to the community. I can't resist a bargain and totally abhor waste. So for the past few weeks I have been getting up to 60 pounds of produce for $10 donation. OK, now what to do with it all. Last week I came home with several eggplants. Grilled eggplant, oven roasted eggplant Parmesan and the rest were roasted for a dip. Summer squash and zucchini were grilled, baked, stir fried and finally the rest were dried for chips. Tomatoes became the sauce for the eggplant Parmesan. Now this week it was cucumbers. Pickles!

    I accidentally found out. I saw a community group's Facebook page linked to another page I follow. While reading it, it said mentioned that the program now came to their site once a month. I investigate further and found out that there are actually a couple of locations right in my own neighborhood. I was totally oblivious. It is run through a food bank and their objective is to not allow food to go to waste. They encourage anyone to come and get the produce and if they cannot use it all for them self, to share it with family, friends, needy individuals, etc. It accomplishes multiple goals: reducing wasted food, providing low cost food to those who need it, and encouraging health eating. One cannot help eating healthily when they take home a truck-full of vegetables!
