Simple, easy cooking

My daughter laughs at me because she knows how much I hate cooking & being in the kitchen in general. But, I have made it my mission to become a better cook and make really tasty, but healthy and easy meals. I figure there are thousands of recipes out there, as well as great restaurant food. I want that food! I got into a rut and only made the same basic things all the time....can you say boring! I am still a work in progress, but I thought I would share a couple of super easy recipes.

Salsa Chicken:

*made in a crock pot

boneless, skinless chicken breasts
lime juice
seasonings of your choice

* First, wash and season your chicken how ever you like it (I like to use garlic, lowry's, pepper, and maybe chipoltle).
* Put your chicken in the crock pot.
*Add the salsa (enough to cover the chicken well)
*Add the lime juice (I use 1 lime for two chicken breasts).
*Add fresh, chopped up cilantro to taste.

Turn on crock pot and depending on how much you're making, it should take about 3-4 hours.

This is super delicious, healthy, and incredibly easy to make. If you try it, I hope you enjoy it. Everything can be tweaked depending on your tastes and how much you make.

    I think you will really like it.. It's cheap, easy, and delicious, especially the next day. And, the crock pot does most of the work, lol. You can even put it in a salad and just add some wonton or tortilla strips (from the salad section in the grocery store) for a little crunch. I call it my taco salad without the taco shell. So yummy and filling and very low calorie. Let me know how you like the Salsa Chicken if you do try it.
