Today I'm blogging a little bit off the beaten path for me. I'm usually about emotions, Ah Ha Moments, and faith. Today, I'm about dessert and how to have your cake and eat it too - without guilt. What I want to share with you is a little dessert I came up with and which I have been enjoying, without guilt and without a lot of calories and fat, while DH - who eats like a horse and never gains an ounce - chows down his pastries and sweet rolls as an after dinner sweet treat. I call it Pizzelle Cream Sandwiches.
Pizzelle are big, thin Italian cookies. I found Reko brand at my local Sprouts market. These cookies come in dark chocolate, plain and lemon. Each package contains four individually wrapped packets of 9 cookies, each packet, for a total of 36 cookies. I would guesstimate they are about 2 1/2 inches in diameter each - big! Six cookies contains 150 calories, 6 grams of fat, 1 gram of saturated fat, no trans fats, 30 mg cholesterol (they are made with eggs) 70 mg sodium; 1 gram dietary fiber; 8 grams sugar and 3 grams of protein. I use 2 or 3 of these giant cookies so I only consume 1/3 to 1/2 of the above calories, etc. I bought the dark chocolate but I am going to try the lemon next time. Here's what I do:
Lay one Pizzelle on a plate and spread with 1 TBSP Cool Whip Lite or Free. Top that with one thinly sliced strawberry. Place a second Pizzelle on top of that layer and spread with another TBSP of the Cool Whip. Top with any fruit of your choice: crushed pineapple, banana, Kiwi, mango, etc. Top with 3rd cookie. It makes a light and tasty dessert but, beware, it can be a bit messy when you bit into it - in my book that is half the fun
( I'm going to try putting it in the freezer for about 20 minutes and see how that works.)
You can also make this using just two cookies and one fruit with the Cool Whip. I find it sweet enough but if you have a really sweet tooth, you can mix some Truvia on your fruit or in the cream for an extra zing of sweetness.
This has been a nice plus to my eating plan. Not only do I not feel "deprived" but I'm getting something chocolatey and gooey that still contains healthy, good-for-me fruit. To me this is the best of both worlds
Thank you Spark People for teaching me how to eat in a healthier way and how to be creative with my food. One of the most important lessons I'm learning is that this is a "lifestyle" and a "choice" I have made to stop eating mindlessly and start using my head for more than a hat rack
