With my youngest son's last day of school tomorrow, my middle son temporarily being home from college and my oldest son stopping by for a meal...there is tons of potential for temptation to be in my house as far as food goes. So I am taking charge. One day a month will be guilt free when we won't feel bad if we eat outside our way of eating. I will build breakfast muffins that are low carb, both savory and sweet. Two muffins are one serving. I am making sure to keep eggs, frozen and fresh veggies around too. My kids like peanut butter but I rarely will eat it so I will have that around so they can make sammies if they are hungry. I found low carb bread that works for all of us too. It is nice to be able to have 2 slices for toad in a holes! Incase you're not familiar with that, it's when you punch a circle in your bread, toast it in a pan and then crack an egg in the cut out area. Simple and very good. Treats for us will be sugar free Jello and puddings. Ice coffee and tea along with smoothies fit in too. I am still figuring out stuff to do in my ice cream maker that won't throw us off track. So, we will be using our grill, making lots of veggies both raw and cooked and utilizing eggs. Self control, consistency, determination, vigilance, and discipline will help me be confident I will be successful. My husband and kids support will help too. I have recruited my 13 year old son to find and accomplish adventures each week too. He loves his video games, and he will get to play them, but adventure outside the house is great for you. After talking with him yesterday, he is in! Feeling positive & hopeful. This is my plan to survive 3 grown, hungry, eat me outta house and home boys this summer.
