Nutritional Goals; how do you....?

So, I've gotten through the icky Dr. appointments I'd scheduled, and have been monitoring the dang BP, which tends now to be too low. I've been tracking my diet pretty well, although I'm shocked at the nutritional deficits I'm running.

I thought I had a pretty healthy diet: very low on processed foods, lots of veggies. In fact, I'm usually just under the calorie count for the day, however, I never reach targeted goals for nutrition! Even when I'm taking a multivitamin! The only one I get close to is sodium...which is the one that I wish wasn't always close, especially since I don't add salt while cooking or eating! Grrrr.

I've been watching potassium especially carefully, since the medicine I'm taking can cause severe leg cramps and other unsavory things to happen if it's too low. It's always waaaay low. I'm going to add some more beans to my diet to try and remedy that, but it's frustrating.

What about you guys? Do you watch the nutrition goals closely? What the heck should I be adding to my diet in addition to fruits and veggies to get these nutrients in? It's truly discouraging. HELP!

Oh, and by the way, even though I'm UNDER the calorie count for most days, I. HAVEN'T. LOST. ONE. POUND. erg.

    Spark gives you a recommended calorie count, it isn't necessarily the perfect calorie count for you. It's based on the average person who is your height/weight and your goals. Mine doesn't quite work for me to lose, either, but I have underlying health issues that spark doesn't take into the equation. If you find you are not losing, but not gaining either...it could be as simple as not eating enough or needing to drop it a little bit. Everyone has a different metabolism rate. Are you very active or inactive? If active, you might need more calories, and best is to get in more lean protein calories, if building muscle you need more protein to maintain those muscles and burn more fat...etc. I do watch my macro-nutrients and i tend to lack in some areas as well.

    I just read an article on nutrition here at SP, describing and explaining the "My Plate" graphic. When I read these things, pretty much I'm thinking, "I know," and "I do." Why is it just not working?!

    I also struggle with getting my nutrients in. I take a multivitamin daily too. I'm working with a trainer 5 days a week but there's days I still struggle with food.
