First weigh-in, day 8. And What do you do when you plateau?

I stepped on the scale this morning after 8 days of beginning a fresh weight loss journey. The first day, after making a sparkpeople profile, I took some honest pictures of myself and took measurements of arms, hips, waist, and bust and then also weighed myself. (I love that Sparkpeople has all of these metrics for tracking.)
My starting weight was 189 and this morning I was down to 186.2! It was a different kind of excitement from what I've experienced in the past. I feel like I've finally hit a stride that is sustainable, and it's taken me years to figure out how vital that is to reaching my goals.
I've fasted, gone on super low carb diets, crazy exercise routines, etc. None of these made lasting impressions or changed anything long term. Sure, I lost 10 lbs. in 2 days on a water fast, or 10 lbs. in a week on the low carb diet, but it didn't matter, because a month later it was back! lol
Long story short, I feel good. but it also got me thinking about something else and I would love to hear some of your insights on this. As I am taking it slow (my goal I'm hoping to reach isn't until November if I keep my pace), I know there is definitely the possibility of having a week or two where I don't seem to lose, or perhaps somehow I even go up a pound. How do you guys cope with plateaus, and how do you re-calibrate to start losing again? I'd love to hear your experiences.
