Time Saving Meal Strategies

When I cook, I like to make meals that will include leftovers. Some to be frozen, some to stay in the fridge for lunches and a later 'smorgasbord'. Last night, I made a huge pot of chili. Some will be for tonight; I know I won't have time/energy to cook tonight. Some went in the freezer for a future/unexpected time when a 'life' emergency comes up. I think prepping ahead is the best way to avoid ordering take-out and defaulting to unhealthy choices.

My 3 kids are picky (by my standards). But, the more time I spend with other people who have kids, the more I'm realizing that my kids eat more variety of foods than other peoples' kids do. I think they just have 'preferences'. At least I don't have kids who will only eat chicken nuggets, hamburgers and pizza. My kids like those things, but they also enjoy fruits and vegetables and are not too resistant to trying new things. They just don't prefer spicy food (although my middle is becoming more adventurous about this area of cuisine).

    Batch cooking is a big deal in our kitchen. Since it's just the two of us, leftovers are frequent.

    I love batch cooking and freezing in portions to help my future self. I am stocking up now as I am half way through my 2nd pregnancy and will need these things being easy!

    My mom was a great believer in "if the kids are hungry enough, they will eat what I serve". I wasn't nearly as tough a mom. Sigh.
