Challenged in the Kitchen as a Dieting Vegetarian (almost Vegan)

This has been the hardest struggle so far - as I continue my journey as a vegetarian, I struggle with putting together full meals that are satisfying. Without the meat, the plate doesn't feel like a balanced meal. I do not miss meat at all - haven't even had a desire for almost 3 years now.
The cog in all of this is that I not only have severe allergies to meat, but also most products with gluten as well as fermented foods. I'm also beginning to reject eggs, which I have been savoring when I need to feel full.
What is left??
I know... people do this all the time. Veganism isn't a jail sentence, but it is a double-whammy when you have to go gluten-free.
I've loved the alternatives I've found from nut sources; butters, milks, cheeses. But I guess what my biggest problem is that I am a lazy chef, and I can't seem to get creative enough in the kitchen.
I've tried blogging from my phone and it appears to not have posted, so I am challenging myself today to keep checking in here and experiment with the spark recipes for inspiration.
I'll let you know how it goes.
