It's Monday!

I did a lot of meal prep on Saturday for this week. I think I used every pan in the kitchen. Time consuming and a lot of work. I know I'll figure it out as I go along and find an easier system. I worked with chicken, Italian ground turkey, spaghetti squash, peppers, humus, yogurt, carrots, Yams, lettuce, tomatoes, red grapes, cantaloupe, red cabbage, blueberries, raspberries, eggs, deli turkey. I was able to make a variety of lunches for work - lettuce wraps for Monday, Taco salad for Tuesday, Spaghetti squash and ground turkey for Wednesday, Chicken and spaghetti squash for Thursday, Chicken and yams for Friday.
Dinner will mainly be salads. I'm enjoying oatmeal with blueberries/raspberries for breakfast today. Morning snack greek yogurt, Afternoon snack apple and peanut butter. Good start! I'm paying attention to my food intake for various reasons.

1. Weight Loss
2. No more heartburn
3. Eat healthier
