My daughter had a pizza

I'm feeling a bit tired and achy, and hungry. Very hungry. My daughter had just fixed a frozen pizza. You know those single serve ones from Red Baron, the deep dish kind? That are insanely good? I really wanted one, but I'm trying really hard to not eat gluten or dairy. I don't know of a pizza that fits into that restriction. So I started throwing stuff in a pan. ..... Lentils and quinoa with Italian seasoning in one pot. In the skillet goes coconut oil, frozen peppers and onion blend, cauliflower rice with onions and carrots, diced up grape tomatoes, frozen spinach and garlic. It was about 200 grams of veggies. When both pans got done, I dumped the veggies in with the quinoa and lentils. Then in the skillet I added 3 slices of precooked bacon, chopped up, let that sizzle. Added the bacon to the others, then topped it off with a fourth of an avocado and a table spoon of real mayo. Oh my!!!! It was so yummy!!!! And I'm stuffed. It took the same time as the pizza would have taken, and way better for me. Oh. The numbers ..... 505 calories, 52 carbs, 26 fats, 18 proteins and 11 fiber. Yes the proteins are low, that's one of my daily struggles. But, it was gluten and dairy free, nutrient dense, kept me in my calorie range and filled me up.
