I've been mainlining bell peppers with roasted pepper hummus for weeks now. They are so tasty, quick and easy to prep, and they don't go bad before I can eat them. I *must* have one of each color, so that's four bell peppers' worth of veggie snackability to get through. Have you noticed that food tastes better when it is visually appealing? I certainly have - and a bag of red, orange, yellow, and green bell pepper strips is so pretty! The different colors are also different nutritionally, and in flavor as well. Yum! But I didn't want to eat the same thing every day and get burned out on them. What would I eat then?? Not to mention eating a nutritionally varied diet is also important. So I started trying to think of some snackable veggie options that didn't require a lot of prep work, and were easily portable. And that's when I remembered...SUGAR SNAP PEAS!! These things are fantastic, and they must be the closest a veggie can possibly get to being candy. Even more so than red bell peppers! I don't know why I never think of them, when they're always such a treat. Oh yeah. I'm usually buying cookies. (I'm saying goodbye to those days!) I bought a small bag of the sugar snap peas at the grocery store this weekend. The first one I bit into on Monday was amazing! Such a perfect crunch, and the sweet flavor... Nom, nom, nom! They make a perfect complement to my lunchtime sandwich. Who needs chips with these beauties? Maybe I'll even try cooking some one day. But they're so good raw, I can't see how they could taste any better. Seriously, I don't even use any dip or anything. What are your go-to veggie snacks? I'd love to find even more yummy options!
