Covered Dish Strategy

I hosted a covered dish lunch today after church for our Church widows, and let me tell you! These ladies are excellent cooks, and they’re not afraid to use calories!

Normally I bring a fruit salad, or cut up pineapple, or something very healthy, but since the RSVPs were heavy on the desserts, and lacking in entrees, I decided to make an exception to my “usual” and brought egg noodles and IKEA meatballs that I could serve from a crockpot... easy and not TOO bad a choice.

BUT,....

There was a lot of food, and even though we served 25, there were a LOT of noodles leftover!

So I’m looking into ways to use noodles up.... and may even look to see if they will freeze... but right now I’m thinking of a dish that is layered like lasagna, but using a lot of vegetables, like squash and eggplant and onions and peppers.... that could use quite a bit of noodles up without all those carbs being the bulk of the dish.... I DO have some Italian sausage made from turkey meat that would be perfect for it!

And so flavorful that it won’t even need a lot of cheese!
