Binge Eating!

Recently I came across a statement that said, "Binge on healthy foods. It's not impossible to gain on healthy food, but it isn't likely."
So I've been experimenting with more fresh produce in recent weeks. One of my successes is what I call my "Apple Yogurt Nut Breakfast Salad". This is cutting up one apple in bite-sized chunks; adding coconut Greek yogurt (or any flavor); 1 T of walnut pieces and 1 T of c'raisins. This makes a tasty start to the day. My husband has learned to make it, too, but he just shakes out what looks right to him with the nuts and c'raisins.
Another treat I've come up uses spaghetti squash as a base. One way I've fixed it (once the spaghetti squash has been cooked and prepped) is by adding 1 serving of turkey pepperoni, 1 T bacon bits, and 1/4 C shredded cheese. Today I tried blending 1/8 C tomato pesto, with 1/4 C yogurt dressing and using that for my marinara sauce. The tomato pesto is a little higher calorie than I like, so some other options would be to use Ragu's Simply tomato sauce OR their Simply Alfredo sauce ( which uses cauliflower as the base for the sauce).
It has been fun experimenting, finding out what I like and seeing what my husband will like. He really, really likes my apple breakfast salad but he eats it other times, too. He runs me short on my Greek yogurt, but I'm glad we are both eating healthier.
