Breakfast Pasta

I'm an avid cycling (I've ridden a little over 3800 miles so far this year), and so it's important for me to keep my high-quality carb stores filled up! Like most cyclists, one of my favorite sources of high-quality carbs is pasta, and recently it occurred to me that I could make it for breakfast. After a few tries, I've come up with a recipe that's simple, doesn't take too long to cook, and tastes super-yummy!

1. I boil 2-3 oz of spaghetti in water with salt and olive oil for 10 minutes.

2. While that's cooking, I cook up some spicy Italian Sausage (100 cals worth) along with diced onions, diced bell peppers, diced tomatoes, and spinach. I season this with salt, pepper, oregano, garlic salt or powder, and crushed red pepper (I like heat in my food)

3. When the spaghetti is done, I season it with butter, olive oil, and all that I mentioned in step two. It's possible, of course, to over-flavor the meal at this point, but I found that if I don't season the pasta, it tastes very bland and ruins the meal.

4. I then top it off with two eggs over easy so that the yummy yolks become the pasta sauce!

Since I'm taking a more intense bike ride today, I enjoyed a healthy plate of breakfast pasta this morning, and now I'm giving it a good 2-3 hours to digest and absorb into my system. Then with this super fuel in me, I'm going to zoom down the road!
