We celebrated our anniversary weekend with our freinds at the campground. It was a good time. we are a small group and enjoy playing bags (cornhole) when we are together. We also like to eat. I currently eat only plant based foods during the week. I eat meat on the weekends. We had steak from Nebraska this weekend and cheesy hash brown potatoes. Sooo goood then we got into the halloween candy and of course there is the beer. Stepped on the scale this morning expecting to be a pound or two up and to my surprise I was a pound down. I kept rechecking thinking it was a malfunction but no. Maybe when we set back the clocks an hr the scale set back a pound? Lol. Whatever. I cannot figure out this weight thing. I am always 2 pounds up on Sunday then lose it by Thursday. I do know that when you are strictly plant based the weight will come off naturally as these foods are generally low calorie and fat free with a few exception. I choose this diet because I am trying to reduce my cholesterol. I notice that my blood pressure is now in the normal range and I don't have as much pain in my joints. I could easily switch to plant based all together but if you have ever had steak from corn fed beef you would understand why I treat myself.
Today I have a plant based corn chowder in the crockpot. I used my home made oatmilk. It does not curdle like cows mild so perfect for the crockpot. I do use chicken broth granules as to flavor as it doesnt make much of a difference fat and cholesterol wise. I'll let you know how it turns out.
