Well, I had PLANNED to keep a daily record of how things were going with my new WOE, but I guess I’ll just jump in right here. I’m 12 days into my January vegan challenge and I'm having a grand time!

Here is some of the food I've tried this month.
Last night I made this tofu and edamame noodle dish with gluten free noodles. It was really good, even though I don't usually enjoy noodles.


This is an eggplant donburi by Just One Cookbook. It's sweet and salty and delicious.

This is a random veggie pizza. I made the crust with chickpea flour. I don't love the taste of chickpea flour, but it gives me more protein and fiber than other crusts. I've discovered that I actually enjoy pizza without cheese! And maybe I will come around to the chickpea crust.


My favorite treat this month has been nice cream (freeze a banana and toss it in the food processor). This time I added a topping of strawberries and cacao nibs. It's also amazing with cocoa powder and tahini and a little maple syrup.


I've discovered that I like taking oatmeal on winter hikes. It's a nice warm treat on a cold day.


But here's one of my favorite quick meals. Hummus, veggies, and crackers. I make hummus and keep a steady supply in the fridge, so it's always there when I'm hungry.
